With a specific wish list, Julie struggled to find a property that had it all, so she took on a project, and has never looked back
F
inding the perfect property wasn’t easy,’ says Julie. ‘My husband Adam and I were looking to upsize, so that our home could double as an office for his company. ‘He has a small team that comes to work with us, so it was crucial to find somewhere with a home office and loo somewhat separated from the rest of the house. This was the very first property we viewed at the start of our search, and it was just a 10-minute walk from our home at the time. We liked that it had the office space that we wanted, but otherwise it didn’t exactly blow us away. It needed a lot of work, and neither Adam nor I were sure about taking on such a huge project, so we put this property in the “maybe” pile, and kept on looking. Over the weeks that followed, we viewed a number of houses. Each had its merits, but none met our criteria in terms of the all-important office space, so we decided to give the first property a second chance, and came to view it again. To our surprise and relief we found that we actually really liked it, despite all the work it needed. It offered more space and potential than anywhere else we had viewed, and we could see it really suiting our lifestyle, so we took the plunge.

We started renovating the house right away; it needed so much work we didn’t want to waste any time. We wanted the house to have a better flow and a more functional layout, so we hired a builder to help reconfigure it slightly. In the bathroom we had part of the wall removed and a new one built to make it feel more spacious, and elsewhere we had a wall built to divide one of the reception rooms in two, so that we could have a snug for TV-watching and a separate home gym. Our house was built in

‘Add texture by giving floors the concreteeffect treatment’
‘DON’T BE AFRAID OF TRYING NEW TECHNIQUES. MOST THINGS CAN BE FIXED IF UNSUCCESSFUL, BUT YOU WON’T KNOW UNLESS YOU TRY…’ 1918, which means there’s no shortage of character and features – something I absolutely love about it. The downside, though, is that it’s a little higgledypiggledy, and some of the rooms really weren’t fit for modern furniture. This means that, unfortunately, we had to sacrifice a feature or two for more harmonious living. In the master bedroom, for example, we had to remove a really beautiful old fireplace, so that we could get our bed positioned comfortably. On the whole, though, we did our very best to preserve the property’s history.

Updating the interior While the building work was going on I spent every day chipping away at the decor. Every wall, and every ceiling for that matter, had layer upon layer of wallpaper that needed removing. There were at least three papers piled on top of one another per wall. Every room was a grubby cream-magnolia colour that I hated so, room by room, I painted the walls in shades that we love; blues, greys and whites, and added decorative wallpapers here and there. We also

Decision time
I spent all day almost every day for three months decorating, and every evening shopping for furniture and homeware online. It sounds like a fun life when I think about it now, but at the time it felt incredibly stressful. There were so many decisions to make, plus a budget to be conscious of, and there were so many times I almost cried after difficult

interactions with the builder, and from feeling so incredibly overwhelmed. But all that being said, I am so glad that I was able to have such a huge influence on the function and appearance of our house, as it really does feel like my home.
Making our mark
I tried to keep costs down by shopping in charity shops and high-street stores. I found many fittings and furnishings from the likes of Ikea, and loads of our homeware, including the rug in the living room and the bar cart in the dining

Don’t write off the idea of a darker palette. Painting just one wall in your chosen shade adds drama and height. And in a large room a bold colour can warm it up and make it feel more cosy. Think about the finish you’re after. Gloss paint adds glamour, but will also highlight any imperfections on the wall’s surface. Bring in accent shades. If you’re fortunate enough to already own a crate or box big enough, use that! If not, you can purchase crates fairly affordably at Ikea or online (try eBay or Gumtree for second-hand ones). Sand the crate until the edges are smooth and you aren’t at risk of splinters. Brush off the dust. For a top-quality finish, apply a coat of primer then, once dry, sand again using fine grit paper. Remove any dust. Finish by varnishing or painting the crate. Apply two to three coats, leaving to dry thoroughly between each layer. Finish with wax or sealer. Once dry, fit castors to make your shoe rack mobile. These can be bought on Amazon.

Katey’s 1970s bungalow wasn’t the house of her dreams, but she learned to love it as she transformed its challenging interior into a unique and contemporary family home

T
his house was a bit of a panic buy, I wasn’t in love with it,’ says Katey (@ktk_styling). ‘We thought we’d secured our perfect home, but the purchase fell through at the last minute and we had to find something else to buy quickly. This bungalow was affordable and in a nice, quiet location so we went for it. The interior of the house was very 1980s in style, with loud stripes, burgundy kitchen tiles and lots of peach. There were tatty old carpets, worn lino floors and it had an unusual layout as well. The bedrooms, bathroom and kitchendiner were all on one level, with steps down to an open-plan living room and conservatory. We liked this quirkiness and I was confident I could do something with the house to make sure it suited our needs as a family.

I started by taking up the old floor coverings, apart from the living room carpet, which was neutral and still fine. I then painted all the rooms white, just to make the house feel liveable while I worked out what styles to go for. Our first big project was tackling the bathroom and separate loo. We had the two rooms knocked through and I went for a clean, modern look. I wanted some interest though, so I chose monochrome, geometric tiles for inside the shower. We’ll probably think of moving in a few years, so I was wary of anything too

‘I DO LOVE COLOUR! MY RULE OF THUMB FOR PLANNING A ROOM IS TO HAVE THREE ACCENTS IN A ROUGH 50/30/20 SPLIT’ bold, but I felt the tiles added personality and made it feel more fun. The split-level living and kitchen area was the main selling feature of the house. It’s a large space that needed a complete update, so I took it one step at a time. First, I replaced the fancy wrought-iron balustrade between the dining area and the living room below with plain glass, and that instantly made a huge difference. I did the same on the stairs leading up from the living room. The living area came together quite easily in the end. I painted the stone fireplace grey and the walls in my favourite teal and yellow colours, which are easy to update if I fancy a change. We bought a new sofa

and a few accessories and just added them to what we already had. The conservatory leads off the living room and when we moved in, it had garish stained glass in the windows. We swapped it for plain glass, which allows much more light in.

I wanted to make sure we were spending our budget in the right places, like the kitchen-diner, which we use all the time. The old kitchen had tired, cream cupboards and was ready for an update. I worked with a local kitchen company and chose white quartz work surfaces, a chunky oak breakfast bar and sleek,

Paint can be used to define a space – try warm colours in the living and dining areas and lighter shades in the kitchen zone. Use furniture as a room divider – an open shelving unit, the back or side of an L-shaped sofa or a console table can break up a large amount of floor space. Maintain flow by keeping the same flooring throughout and choose light colours to give the illusion of even more space. Add mood lighting in the living area to create a cosy atmosphere and hang pendants above an island or dining table. Keep a clear path through the space to prevent it feeling cluttered.

Dining zone
The kitchen is very light and as everything’s open-plan, I was after a different feel in the dining area. We invested in a contemporary table and bench, for a visual link with the wooden breakfast bar, and I painted the back wall black for drama and warmth. The whole living space is family-friendly and we can all be doing different things in the same
room. I’m pleased with the herringbone vinyl floor tiles, as they soften the kitchen and dining area. They extend into the hallway, too, and as the house is mostly on one level, they pull it all together.
Creating colour schemes I was conscious about keeping things quite safe and neutral without being dull. I don’t think you necessarily need colour to create impact, and statement pieces like the oak dining table and black pendant lights add wow-factor. That said, I do love colour! My rule of thumb for planning a room is to have three

accents in a rough 50/30/20 split. I’ve used yellow, grey and teal in the living room, and tangerine, black and turquoise in Heidi’s bedroom. For our own bedroom, I combined grey and coral with navy blue, which I think is an under-used anchor. It’s softer than black and sits well with so many other tones.

Creative hacks
I generally add colour using paint or accessories as I like my schemes to be flexible. I fell in love with a geometric wallpaper that was perfect for our bedroom, but instead of pasting it to the wall, I just suspended lengths behind the bed. You still get the impact of the pattern but it’s not fixed and was really quick to do. Although this may not be our ‘forever’ home, Simon, Heidi and I are settled here for now. This wasn’t my first choice of home, but it’s lent itself incredibly well to our taste and lifestyle and I love how we’ve made it our own.’

Decide on the style and fittings you want and don’t forget storage. Most bathroom suppliers have user-friendly online planning tools to help you create the perfect layout. In a smaller bathroom, spacesavers such as an over-the-bath shower, a compact bath or a corner basin or loo are worth considering. Re-hang a door or replace it with a sliding barn-style one to create precious extra room. You’ll save time and money by re-using existing plumbing, so avoid re-positioning key pieces like the loo and basin unless it’s essential. Add stylish towels, toiletries, plants and accessories to a classic suite for colour and interest that’s easy to update.

After a year-long search, Sally nearly gave up her hope of home ownership, until along came the perfect property
W
e had been looking to buy a house for 12 months at least,’ says Sally. ‘We had always rented, but were ready to put down roots. ‘We went into the search prepared to take our time and wait until the perfect property found us, but after discovering I was pregnant with our second child, the search became a bit more intense, as we really wanted to be settled before the new baby arrived. By that time, we had viewed countless houses (which may sound dreadful to some, but it’s actually one of my favourite pastimes) and even put in offers on three or four particularly lovely properties, but nothing had worked out.
Last-chance saloon After a lot of disappointment we decided to stop looking for a while as it was starting to get both my husband and me down. However, I forgot to cancel email notifications from online sites, which continued to fall into my inbox every so often with properties that met our criteria. One morning, after swearing that our search was on hold, my phone buzzed, and it was an email about this house. It looked so perfect – even through the screen – that we didn’t want to risk missing out on what might be our dream home, so we made an exception, called the estate agent and scheduled a viewing for the following day.

During that time, when we were excited and eager to make it our own, we used to bundle our son into the car in the evenings and drive by the property like a pair of house stalkers, daydreaming about the day we’d all move in!
Room rejig
There was a lot to love about the property and it had endless potential, but it still needed a fair amount of work before it could comfortably accommodate our lifestyle. It was built back in the early 1900s, so wasn’t designed with modern
living in mind. This meant that the downstairs layout, which was quite impractical, didn’t work for us at all. The kitchen was nice enough and had been finished to a high standard, but it had a really unusual flow, with a utility-cumshower room at the back, and an old glass ceiling that made the room baking in the summer and freezing in winter. Our dream was to be able to open up doors onto the garden for when the weather’s warm and the sun’s out, and to have a much larger area to cook and entertain in.

that way, but our architect advised us to knock down the entire kitchen and rebuild from the foundations up; that turned out to be just the start of our ground-floor renovations! The living room used to be part of the dining area, and had a study leading off of it to the front of the house (did I mention it had an unusual layout?). We built a wall between the dining room and living room, and added folding doors for an interchangeable space that could either be open-plan or closed off and cosy. The study was knocked through, so that the lounge is now one large room that has light flooding in from the front and the back. We also added a fourth bedroom, as by this time I was pregnant with our third child.

Ever-evolving decor
I do pretty much all of the decorating in the house. I’ve always loved interior design as, growing up, I was surrounded by beautiful fabrics and architect drawings – my dad was a builder and my mum has her own soft furnishings business, so I guess it’s in my blood! When the children were young I just wanted the interior to be clean and safe, but as they have grown older I have really started to appreciate my interiors a lot more, be a little more adventurous and experiment with colours and patterns. I’m usually inspired by something I see in a magazine or on Instagram or Pinterest, and wonder how I could recreate it in my own style to fit into our house.

To cover a 30x40cm cushion pad, cut a length of fabric measuring 34x94cm. Turn over 1cm, then 1cm again along each of the two short edges, pin, press and machine-stitch. Lay the strip of fabric on a flat surface, right side facing up and fold the left-hand short edge towards the middle by 20cm, then fold the right-hand short edge over, so it overlaps the left by 10cm. Pin the long sides together. Machine-stitch the two long sides of the fabric, taking a 1cm seam allowance. Turn the fabric over the right way and press. Pop your cushion pad into the case.

All my own work
My husband works long hours and is happy for me to have free rein to decorate how I wish. It’s a running joke that he always walks in from work wondering whether I have repainted, or knocked down or built walls. It has become a bit of a game in our house; the children and I place bets on how long it will take him to notice one of my interior updates. He once managed to go three years without noticing a huge bright pink star I’d hung in our bedroom! I think that’s his record so far. There have been a few decor disagreements along the way, but overall I am so proud of how our home has turned out; and I’m even more proud that I did most of it myself.’

ecause of its location, which is by a lovely river, we fell in love with our house,’ says Anneka. ‘When we bought it we knew that we’d need to make big changes before the hideous kitchen would be usable. The house had been repossessed by the bank, so no one had been living there for a while and it was completely run down. But it was such a good size and price for first time buyers, so we thought “let’s do it”.
Moving in We had to move in straight away because we couldn’t afford to pay a mortgage and rent while we did the work. We did the living room first, so we had a space we could stay in. The kitchen itself was so disgusting, it was beyond cleaning. We couldn’t live with it so we ripped it out ourselves as soon as possible. We were without a proper kitchen for ten months, and in the meantime we set up different tables, one for a microwave, one for a halogen oven and one for a gas hob. We had a lot of takeaways during those months! But it was preferable to living with the existing kitchen. Once we’d got the units out, we removed an entire stud wall and even chased out new electrics with the help of our electrician friend. We then tackled the plastering work with our friend who is a plasterer.

Obviously during those ten months we ate out a lot, and visited some lovely trendy cafes, which is where I got my inspiration for the look of our new kitchen. I wanted it to feel like somewhere that was cool to hang out in. In particular there’s a place nearby called The Folk Cafe that’s a bit industrial and rough around the edges. It has loads of

plants everywhere and a bit of an urban jungle feel to it.
Choosing the design
I fell in love with the kitchen worktop but Stephen wasn’t so sure. It’s just a simple laminate top, but it’s luxurious and hard wearing. It looks expensive, but it actually cost us £700. The grey units go really well with it. I was trying to figure out what colour to paint the walls. Green is my favourite colour so I plumped for that and it just sets the rest off perfectly. The layout was Stephen’s idea. He had always wanted a breakfast bar and to feel like he’s having his coffee in a favourite cafe.

Making savings
I didn’t want any wall cabinets, just open shelving. We put plywood shelving up and I felt that we needed to use the same material elsewhere. We didn’t have enough room for a standard dining table, so we made a plywood dining table that was just the right size for the space. Stephen is a carpenter, so he was well up for it, and it was super cheap to do. Another saving we made was on the flooring. We have suspended floors, which move a lot, and when we moved in the tiles that were in place were all cracked. I wanted to get flooring that would withstand the movement, but it also needed to be affordable – laminate was the answer. It now looks amazing, fits beautifully and really adds to the cafe style we always wanted.’

ZONE AN OPEN-PLAN SPACE
Use different flooring in each zone, or, if you prefer the same flooring, add a rug under the dining table to define each space. Design the layout to create some sort of a division; a kitchen island or peninsula works well to create a functional break between the cooking and dining spaces. Paint the walls different colours, and hang pictures to create a different mood in each zone. Add lighting to help create a defined dining area. A chandelier located above a table will look different to a kitchen that features wall lights and downlighters. Use open shelving. If the space is large enough, place a backless shelving unit between two areas. Fill it with books facing both ways, ornaments and objets, for a low level dividing wall through which light can easily flow.

Impressed by Anneka’s worktops? Here’s why this budget-friendly material deserves a place in your kitchen
What is laminate worktop? High-pressure laminate (HPL) is made by soaking multiple layers of decorative paper in resins to form a single layer. This is then applied to a high-density core, usually chipboard or particleboard. It’s the cheapest worktop option, because it’s inexpensive to produce. Allow £40-£100 a linear metre for premium grade laminate.
How can I spot quality? The thickness of the laminate layer and density of the core is a good indicator. Samples, available at showrooms, usually

show the cross-section. Look for a laminate layer at least 0.5mm thick and of consistent thickness. The core material should be tightly compressed with no little holes.
What should I avoid? Laminates that don’t wrap right around the front edge of the worktop (on the longest sides) can suffer from water ingress and ‘blow’. A good-quality laminate will be wrapped around the full edge of the worktop, continuing far enough underneath to ensure a watertight seal.
Will it peel at the ends? Peeling edge strips used to be a problem, but improved adhesives have largely eradicated the issue. One way to reduce the chances of peeling is to have the end edges postformed by a specialist worktop supplier (in the factory) but this will involve careful templating (measuring) and increase your costs.
What is the latest laminate look? Textured surfaces that convincingly mimic natural materials are hot, but expect to pay up for the tactile treat as it requires a thicker laminate. The new square-edge profiles offer a crisp, more contemporary look, compared to the traditional rounded edges. Matt surfaces bring a fresher look than super-shiny, dust-gathering gloss.

ABOUT ME I’m Jane Fitzpatrick and I live here with my husband, James, and our two sons, Billy, 18, and 15-year-old Freddie. The property is a four-bedroom detached, converted farmhouse built in the 1800s, in Weston village, near Spalding in Lincolnshire. THE CHALLENGE Drab, dated and without a shower, we would have to rearrange the bathroom’s layout completely if we were to make space for a shower. MY WISH LIST Both a bath and a large walk-in shower were absolute must-haves. For the decor, I was keen that it feel rustic, but with a modern twist.

e moved to Spalding because my husband and two sons all play rugby here and we were spending so much time travelling from our former home an hour away,’ says Jane. ‘Our old house was our self-build dream property, which we had designed ourselves, so finding a new home was always going to be difficult.
Working it out
When we saw this house, we couldn’t believe our eyes: it was character-filled, with original features and so much future potential that we simply couldn’t miss the opportunity. We agreed to live in it for a year without doing anything other than painting and decor, so that we could get a feel for how we would use it as a family. However, the rooms we weren’t able to live with were the horribly dated and poorly-designed bathrooms, where space was simply not maximised. Having three large males in the house, this was a top priority. The main bathroom included a bath, but no shower, while there was also a tiny shower room across the landing, but to be honest it was a bit of a nightmare in the mornings with all four of us trying to get in there.

I was keen that the new bathroom feature both a bath and a large walk-in shower. However, given the modest size of the room, this seemed impossible. Our builder then suggested removing the wall between the bathroom and hallway, and repositioning the door to create more room. This made space for a shower and a cute alcove for the bath to nestle in. We also decided to install underfloor heating rather than have radiators to save further wall space. Choosing built-in storage is great for towels and toiletries, too. Neither of these jobs

Setting the style
For the decor, I wanted to create a modern sanctuary that also respected the character of the property – hence the nod to rustic country charm. For advice, I read interior design magazines and scoured Pinterest. However, my biggest inspiration was our local Italian restaurant. It has split-face granite tiles on one of the walls, which I loved and wanted to include. I like the combination of grey and mustard, too – the muted tones with a fab pop of colour work so well. So, once I’d found the tiles, I couldn’t resist shopping around for accessories, long before the work had even started. To add a splash of greenery, I popped a couple of faux succulents here and there – they look great and need no maintenance.
Enjoying the results
As the house is old, we knew it was unlikely to be a project that ran entirely smoothly. We encountered antiquated plumbing and pipework issues along the way, and the old boiler and hot-water tank both needed to be replaced,

What are the main types? Electric or ‘dry’ systems involve a series of electric wires, often contained in a heat mat or cabling system, installed beneath or within the flooring. Water-based heating, also known as a ‘wet system’, comprises a series of pipes, connected to the boiler and concealed under the floor, that circulate warm water to heat the floor space.
Which type is best? Electric systems are more affordable, but their running costs may be higher, so they are more suited to smaller spaces, such as tiled bathrooms. Water systems are more costly and disruptive to install, especially if a floor level alteration is required in order to accommodate the pipes.

Will it work with all types of flooring? Tile and stone are best because they have good thermal conductivity, heating up the floor more quickly, and give more heat output to run more efficiently. Wood, laminate, carpet and vinyl can be used, though they may be less efficient. Check with your supplier.
When’s best to install? Installing underfloor heating at the build stage is optimum if you are planning an extensive renovation, as you’ll be able to accommodate pipes before your flooring is laid. Do seek professional advice to help you calculate the amount of heat you’ll need to generate and take into account any heat loss afforded by your choice of floor covering. If you are fitting retrospectively, there are also a number of ‘retro fit’ options: low-profile and lightweight super-thin systems can be simply applied to existing sub floor surfaces without adjusting floor height.
Will I still need radiators? If you live in a single-glazed property, you may still need to combine underfloor heating with radiators to achieve an ambient room temperature. Several of the latest designs are also created to fit neatly in between joists, while new apps, such as Hive, allow home owners to control their heating via smartphones.

Preheat the oven to 170C/Gas 3. Sift both the flours, bicarbonate of soda, baking powder and cocoa powder together in a large bowl. In a large jug, whisk the eggs, maple syrup, milk and coconut oil until all combined. Add to the dry ingredients and whisk until you have a smooth batter. Divide the mixture between the cake tins and bake for 25 mins, or until a toothpick inserted comes out clean. Leave to cool in the tins for 10 mins, before turning out and leave to cool fully on a wire rack. To make the frosting, melt the chocolate in the microwave or
bain-marie, and whisk in the soured cream and vanilla extract until the mixture is smooth and glossy. To assemble, place one layer of the sponge on a serving plate or cake stand, add ¼ of the frosting and smooth to the edges with a palette knife, repeat for the second layer and top with the final sponge. Using the remaining frosting coat the top and the sides of the cake. To finish, sprinkle over a pinch of sea salt flakes.

hether you want to hang a curtain pole from scratch or replace an existing one, follow our handy step-by-step instructions for buying and putting up the perfect pole.

PICK A CURTAIN POLE
Choosing a curtain pole kit is the easiest option as it will come complete with everything you need, including pole, finials, brackets and screws, and in some cases, the curtain rings. If you want to also add a voile, look for a double pole.

MEASURE UP
Your pole will need to measure at least 30cm wider than your window frame, so curtains can stack at each end without obscuring the glass. It’s possible for larger poles to be cut to size or for two smaller ones to be joined together. Poles should be supported by two end brackets, plus a centre one for long poles.

DETERMINE THE HEIGHT
Decide how high you want the pole to be, depending on the length of the drapes. Mark a pencil line on the wall, using a spirit level to ensure it’s straight.

Use a pencil to mark the position of the brackets (about 10cm in from the pole ends). Hold the brackets up to the wall and mark the screw holes. Use a cable and pipe detector to check it’s safe to drill, then make the holes. Place a Rawlplug in each, then screw in the brackets. Rub out the pencil lines.

ADD THE RINGS
Thread your curtains or rings onto the pole, allowing one ring per 10cm of pole. Slot through the brackets. The last curtain tab, eyelet or ring on each end should sit between the bracket and pole end.

FIT IN PLACE
Make sure the pole overhangs the window frame equally on both sides, then screw it into the brackets, if necessary. Finish with decorative finials at the ends.

How to create your
OWN COMPOST Planning on doing some garden tidying this month? Now’s the perfect time to start your own compost heap…
B
etween now and late November is a great time to build your own compost heap, piling it high with clippings, cuttings, prunings and even bits of shredded cardboard. Get a good mix of these, and next year you will be rewarded with bags of rich, dark, crumbly goodness that you can use as a soil enhancer, mulch or potting agent. Though it is a great way to make use of food waste, there is more to making excellent compost than throwing your peelings on it and letting them rot. If too much of one ingredient goes on at the same time, the mix will be uneven and decomposition may even grind to a halt. Too many grass cuttings, for example, will dissolve into a smelly mess. The best way to create compost is to layer your additions, mixing green material (grass, deadheads, kitchen peelings, soft prunings) with brown waste, such as shredded cardboard and paper and woody prunings, that should be cut as small as possible. Ash is a good source of potassium, but it should be cold and not contain food scraps.

Top tips for GOOD COMPOST
1
A well-mixed combo of ingredients is best
If you don’t have a compost turner, you will need to create the mixture by hand, whether you have an open heap or a closed ‘Dalek’ bin. Every few weeks, get a garden fork, dig it in, and lift and mix the plant material around as it rots down to aerate it. When turning the compost in autumn and winter, watch out for hibernating garden wildlife attracted by the heap’s warmth. A lack of moisture will slow down or even stop the decomposition entirely, so during very dry spells, at whatever time of year, remember to add a can or two of water to the compost heap every now and again. Getting the moisture level right can be a fine balance. Too much and the microorganisms helping the decomposition will be robbed of oxygen and drown. The heap will then become a smelly mess. If this happens, add chopped woody material and shredded cardboard or paper. Too dry? Add veg and fruit scraps, or fresh grass clippings to the mix.

These popular plastic bins have an open base, a fitted plastic lid and a sliding front access hatch. They work well for smaller gardens. They can be used for ‘continuous composting’ where you add green waste at the top and dig rotted compost out at the bottom. However, you’ll need to add a good mix of materials.
TUMBLER
This is usually a plastic barrel mounted on a sturdy frame, with a handle that allows you to turn the bin. There’s a covered access hatch and ventilation points. The tumbling action means your green waste is very efficiently aerated, but for the best performance you really need to fill the bin in one go.
TRAD
The traditional wood compost bin has an open base and slatted sides to let air in. Usually a generous size, it’s more suited to large gardens. The front slats are removable to make digging out easier. If it doesn’t come with a cover, you’ll need to make one. The wood will also need treating regularly.

Roast the chicken for 15 mins. On a separate baking tray, toss the chickpeas in 1tbsp of the oil, season, and cook in the oven for 15-20 mins. Meanwhile, cook the couscous according to the pack instructions. Mix the remaining 1tbsp chermoula with the lemon juice and remaining oil, and stir through the cooked couscous. Combine the couscous, chickpeas, spinach, almonds and apricots in a serving dish, season well. Slice the chicken and use to top the salad.

Steam the edamame and pak choi for 3 mins and drain. Mix dressing ingredients with 100ml water. Serve everything in bowls, with avocado and chillies, if using. Mix the dressing ingredients and drizzle over. Sprinkle with sesame seeds.

SCANDI POTATO SALAD TAKES 30 MINS SERVES 6 1kg new potatoes, halved 170g jar cornichons, halved Bunch spring onions, sliced 200g radishes, sliced 4 smoked mackerel fillets, skinned and broken into pieces 2tsp capers Small bunch dill FOR THE DRESSING 4tbsp creme fraiche 3tbsp mayonnaise 2tsp Dijon mustard

Cook the potatoes in a pan of boiling salted water for 15-20 mins, until tender. Stir together the creme fraiche, mayonnaise and mustard, and season. Drain the potatoes and tip into a bowl. Add the remaining ingredients and the dressing, and toss together.

STEAK SANDWICH TAKES 30 MINS SERVES 4 4 shallots, peeled and cut in half 2 handfuls of curly kale 1tbsp olive oil 4 x 120g steaks 8 slices bread FOR THE SAUCE 150g creme fraiche 1tsp concentrated liquid beef stock 1tsp Dijon mustard FOR THE ¼ red cabbage, finely CRUNCH Rocket leaves English sliced mustard, to serve (optional)

Heat the oven to 180C/Gas 4. Place the shallots on one half of a roasting tray, the kale on the other half. Drizzle over the olive oil and bake for 12-14 mins. Remove the kale and return the shallots to the oven until they are caramelised. Remove and allow to cool. Heat a griddle pan and fry the steaks on medium heat for 2-3 mins each side. Remove and allow the steak to rest while you make the sauce. Roughly chop the cooked shallots and mix into the creme fraiche with the beef stock and mustard. Slice the steaks. To layer the sandwiches, top a slice of bread with the sauce, kale, cabbage, rocket leaves and sliced steak, and add more mustard if using, then another slice of bread.

Transfer the vegetables to a baking tray and cook for 30 mins until soft. Tip the roasted veg into a large pan with the ’nduja and warm it through for 2-3 mins. Add the chicken stock and blitz using a hand blender until smooth. Stir in the black beans and heat gently to warm the soup through. Serve with creme fraiche, if liked.

In a small bowl, whisk together the garlic, oregano, olive oil, lemon zest and juice, and cumin seeds. Rub all over the chicken and leave to marinate in a large roasting tin for at least 15 mins or overnight. Preheat the oven to 180C/Gas 4. Roast the chicken for 1 hr 30

mins, basting halfway, until it is golden and cooked through. To serve, pull the meat off the carcass and mix into the roasting juices in the tin. Serve with pitta bread or flatbreads, tzatziki, Greek salad, dill sprigs and lemon wedges, and let everyone assemble their serving.

TAKES 20 MINS SERVES 2
1 large garlic clove, chopped 1 red chilli, finely chopped 1tbsp palm sugar or soft brown sugar ½tbsp shrimp paste (optional) Juice of 1 lime 1tbsp fish sauce 1 large green papaya, peeled and shredded ½ white cabbage, shredded 10 cherry tomatoes, halved 50g green beans, cut into small lengths 2tbsp roasted peanuts, chopped

Grind the garlic and chilli in a pestle and mortar until finely ground, then add in the sugar, shrimp paste, if using, and lime juice. Taste to check the balance and season generously with salt and freshly ground black pepper. Toss this dressing with the rest of the ingredients, apart from the peanuts, in a large bowl until mixed, then sprinkle with the nuts to serve.

OAT RAISIN COOKIES TAKES 25 MINS MAKES 30-35 200g unsalted butter, softened 300g light muscovado sugar 2 medium eggs ¼tsp vanilla extract 175g plain flour 1tsp ground cinnamon 250g jumbo rolled oats 150g raisins 2 baking sheets, lined with nonstick liners or baking parchment

Preheat the oven to 180C/Gas 4. In a large bowl cream together the butter and sugar until the mixture is light and fluffy. Beat in the eggs and vanilla extract. Sift the flour, cinnamon and a pinch of salt over the creamed mixture. Add the oats and raisins, and mix thoroughly until combined. Scoop out walnut-sized balls of mixture, roll them and put on the lined baking sheets. Press down on them to flatten slightly. Bake the cookies in the centre of the oven for 12-15 mins or until they turn golden. Remove biscuits from the oven and leave on the baking sheets for a few mins before transferring to a wire rack to cool completely.
