contents Dear Friend,

When I started Evolving Woman in 1994, the pervasive thought at the time from potential business owners was, “I want to follow my dreams and provide a holistic or metaphysical service, but will people pay for non-traditional methods?” Many people were stuck in feelings of inferiority, that they didn’t “deserve” to be successful and make a living while pursuing their dreams. Plus, in conservative Kansas City, it seemed far fetched to make a living as something as out-there as a massage therapist or Reiki practitioner. Luckily, how the times have changed! Today, I see thriving businesses providing vital services to the community. What a blessing that we have learned to put ourselves out there in business, claiming deserved success while nurturing and healing our neighbors. The pages of Evolving are filled each month with these brave, pioneer folks. This month’s theme is the holistic business model — with a special section on women in business — so we may all learn the valuable lessons of how to form a vision, take a chance and create a prosperous, mutuallybeneficial future.

Local Entrepreneur Creates Personalized Cards for Support and Connection A new line of cards with an innovative delivery twist recently entered the card market from a new direction. Heartpings™ are designed to comfort people going through one of life’s complications or simply to communicate, “I’m thinking of you.” The cards were inspired by Kansas City entrepreneur, Ingrid Busch, when her own life became challenging. Heartpings™ link good intentions with the necessity of ease and convenience. After senders create personal messages online, cards are automatically delivered every three, seven or 30 days through regular US mail. Heartpings™ can be selected from six sentiments – Courage, Acceptance, Patience, Serenity, Affirmation and Sorrow, or senders can create their own through a “Design Your Own” function. Each sentiment family includes six cards. Visitors to www.heartpings.com select the sentiment which best reflects the messages they want to share; add their signature to each card; a personal message if desired; include their return address and the address of the recipient; select a delivery option and confirm their order on the secure website. The cards are sent automatically with a firstclass stamp.

Once a visitor has confirmed an order, email reminders will be sent after each card has mailed. If the sender wants to change a message, they can do so prior to the next scheduled mail date. “In today’s world we have many roles to play. And to play them, we have all turned to quick cell phone calls between meetings or text messages while waiting in the grocery line,” Busch said. “Our lives are busy. They are stretched. Yet, in our role as friends, mothers, sisters, brothers, fathers we are also feeling the nagging itch of discontent at lives too thinly lived.” According to one recipient of the cards “I felt like I got a big hug every time I opened the envelope.” One sender shared that sending cards to help someone through a difficult divorce made him feel he’d reclaimed something good in himself. In defining the vision which frames Heartpings™, Busch shares, “Life circumstances take time to overcome. One card, received one day is nice; yet it isn't enough. We need to be more present during the times we’re needed most – when life is most uncertain. By sending a card every three, seven or 30 days we have the opportunity to say, I’m thinking of you. I’m with you. I care.”

New Web Site Networks Kansas City’s Holistic Health Community Wellmonics, LLC, a local womanowned business, announces the recent launch of www.Wellmonics.com, a Web site created specifically to network local holistic (alternative, natural) health communities. Wellmonics™ provides individual communities their own page with links to content created by and for that community. Kansas City is the first community. Founded by Jin Shin Jyutsu Practitioner Nancy Steele, Wellmonics.com was designed to emulate the flavor of a local co-op with members working together for the benefit of each individual as well as the group. Wellmonics members are practitioners or product providers who serve the local community, and they provide most of the site’s content in the form of articles, calendar events, glossary term definitions and discussions, and member coupons and special offers. Members’ content is linked to their profile that provides contact, bio and other information. Individually, this increases member visibility and helps

him/her connect with site visitors. The group also benefits because the combined activity of members creating, updating and sharing or linking content raises the site's rankings with Google and other search engines, resulting in higher placement in search results. Members also have many opportunities to network and develop relationships with each other in a private members-only area of their community. Their own calendar includes events such as training opportunities and business seminars. They may engage in forum discussions, author and share articles on health or business-building topics, enter the chat room, and even private message other members. Membership options allow a member to network only, or network and promote publicly. The Power of Silence Silence is the container out of which your intuition can reveal herself. When your mind’s racing, when the music is blaring, or when a garbage truck is barreling down the street, it’s very hard to hear the subtle promptings of your inner wisdom. In a world where each moment can easily be filled with making phone calls, checking email, or sending text messages, short periods and, eventually, longer stretches of silence are imperative for cultivating a rich inner world. Each winter during my annual women’s retreat I inform students during our opening circle that we will observe silence every day from 9:00 p.m. to 9:00 a.m. and that for the duration of the retreat they are requested to relinquish their reading materials, stay off their computers and cell phones, and keep the TV and DVD players off. Although they’ve been told about this beforehand, I can still see the color drain from their faces when I share the morbid news! I know, I know: it can be terrifying to strip away the things that keep us busy and to face what’s inside us. Open space is scary, and we want to fill it to find comfort. But once people actually do clear away distractions, they learn to fall in love with silence and spaciousness. Here are some ways to bring more sacred silence into your life: • Spend the early-morning hours — until after breakfast — in silence. Don’t check email, and turn off the ringer on your phone (and/or turn off your cell

phone). If you live with others, get them on board, and practice relating to one another in a different way — through loving touch, notes, and glances. • Eat one meal a day alone — without reading, listening to music, surfing the Web, or watching TV. If you have children, do it once a week or every other day. Alternatively, have a solo breakfast or lunch when the kids are at school or napping. • Go on a technology fast one day a week. Stay away from your phone, computer, TV, iPod, even any sort of reading materials. Spend time outside, get out your art supplies, take a yoga class. Go for a bike ride, or have a picnic with your family. Sit outside and do absolutely nothing. • Go on a silent retreat at least once a year. • Have a silent retreat at home for one hour, half a day, a full day, or a weekend • Set your phone so that calls automatically go to voice mail. Then choose when you want to call people back. Ultimately silence becomes a serene stillness that you carry inside you — even as you cross the street in Times Square. journey to wholeness

The Business of Women Jude LaClaire, Ph.D. I think the girl who is able to earn her own living and pay her own way should be as happy as anybody on earth. The sense of independence and security is very sweet. —Susan B. Anthony

W

ould women in business for themselves today agree with Susan B. Anthony, the leader of the women’s suffrage movement for over fifty years? Let’s look at the status of women-owned businesses and see how women are faring with running businesses and self care. Women are actively competing, with the number of women-owned businesses doubling in the last 12 years. In the 35-46 age group, more women than men are starting businesses. According to the Census Bureau, IRS and SBA, women own 38 percent of all businesses. Do women run their businesses differently than men? Studies of small businesses suggest they do. Contained growth and work-family balance are part of their style. “Women entrepreneurs are fiscally more conservative, emphasizing profitability and quality over rapid growth, and their management policies seek to minimize work-family conflicts.” (Businessweek Online: Frontier; May 3, 2000.) Women have less access to capital than men do, which inhibits fast growth. On average, self-employed women earn about half of what self-employed men earn. Women choose to keep their businesses smaller, have less debt and take fewer financial risks. Women’s businesses are rarely larger than 100 employees. They seem to prefer smaller companies

because they can manage their family responsibilities better, may not be aware of funding opportunities for growth and want to maintain control of the business. They tend to be more customer-oriented and build on connections they have. Women gather information and advice from a variety of sources, are more likely to be self-education oriented and attend more seminars offered for small businesses. Women are less focused on hierarchy and their style tends to be more collaborative. Their businesses are more likely to serve consumers than male-owned businesses. The differences between men and women can be attributed to the socialization process of girls and young women; but, very importantly, we react differently to stress. Stress produces hormones called cortisol and epinephrine, which raise a person’s blood pressure and circulating blood sugar level, lowering the effectiveness of the immune system. However, in women, when those hormones are produced, oxytocin is also released from the brain, countering the production of these hormones. Oxytocin promotes nurturing and relaxation. Women then turn to "tend and befriend" (UCLA Study on Friendship Among Women; Drs. Taylor & Klein), nurturing others and gathering with women. As they befriend others, more oxytocin is produced, which has a calming effect. This is quite different from the male response to stress of bottling it up or getting more aggressive. This may explain why women run their businesses and work differently as they experience the stress of being wives, mothers, friends, colleagues and workers.

This does not mean that women are immune to stress. What this bio-chemical difference tells us is that we must do things differently to be healthy as we face the stressors of being leaders at home and in the workplace. If we pay attention to our need to nurture others and to be cared for in return, we will be able to be healthier physically, emotionally and in our relationships. Learning to honor our needs is central to meeting the challenging demands of home and work. So, women in business is the business of women. Perhaps Susan B. had it right when she said our ability to be financially self-supportive and independent would make us happy. But that may happen only if we listen to our bodies, spirits and emotions in selfnurturing ways as we "tend and befriend" others in the work and home environments. One of Susan B. Anthony’s last public statements can be our motto in this regard: “Failure is impossible.” Jude LaClaire, Ph.D. LCPC, LCSW is a counselor, educator and author. It Takes a Community Bethany Klug, D.O.

here’s no doubt about it. Making healthy lifestyle changes is easier, and fun, with the support of friends. In Holden, MO, the entire town has joined together for Fight the Fat Challenge. Sue Huber leads the Green team, focusing on eating more greens. A big hit with the team has been green smoothies. Many team members reported improved sleep, energy and clearer skin. Some even lowered their diabetes medications. Sue taught them to prepare simple healthy foods like hummus, another big hit with the team. She also got them moving with a treasure hunt and tai chi classes. Everyone the Green team started the twelve-week Fight the Fat challenge weighing over 200, some even 300 pounds. Many have dropped twenty or more pounds. Several families in Higginsville, MO got tired of not knowing where their food came from or how it was raised. So they’ve created a community garden. Other families already raise hens, pigs and cattle. Their plan is to sell or trade produce, eggs and meat between themselves. Ruthann Betz-Essinger cooks one meal and eats for a week. She and two friends formed a cooking cooperative. Each of them prepares a single meal large enough

to feed all three families and package it up. They meet once a week to exchange the food. They each get three meals and often have leftovers enough to provide two more meals. It takes less planning, shopping and cleanup time to cook one meal than several meals. Since the meals only need heating, preparation and clean-up is reduced, leaving more time for other, often more enjoyable activities. A meal prepared at home is almost always less expensive and more nutritious than eating out. Try this Liver Cleanse Smoothie or search the web. Green smoothie recipes abound! Can You Trust the Words “I Love You”?

f Charlie Sheen were to look at you across the table at a bar and say, “I love you,” would you trust he means it? If a Himalayan Master after a yoga class looked at you and said, “I love you,” would you trust those words? Aadil Palkhivala’s story of a great Hawaiian healer touched us all when teaching us this spring. He shared: "The Island placed the most hardened criminals in a prison off the side of the big island. They were the worst-of-theworse: psychotic, criminally-insane and considered hopeless humans for their horrific deeds of murder, torture and violence. "Every prison guard assigned to these men could not tolerate being in the prison with them for more than a few days. The warden noticed that one young guard did not quit. He asked why. The guard knew the great Kahuna who had offered to help these men. "The warden sought out the Kahuna who asked for photos of the 30 or so men. Each day for 30 days, sometimes twice, he looked at each photo and repeated the mantra: “I love you. I’m sorry. Please forgive me. May all good come to you. I bless you. Thank you.” As the story goes, each of the hardened criminals rehabilitated. They moved back into society, functioning as contributing and responsible citizens. It is my new mantra: “I Love You. I’m Sorry. Please Forgive me. May all good come to you. Thank you.” In my world, love makes love safe. Love means I consciously will NOT hurt you with my words, deeds, or actions. Love is responsible, vulnerable, trusting, caring, sharing while giving “respect” to the other. It vibrates at the highest level of human emotion and thus is the most powerful force on Earth. This “saying” or “tune” or energy of mantra shared at The Yoga School comes from the Hooponopono Hawaiian art which says we prosper by taking 100 percent responsibility for ourselves. That includes our success, opportunities, happiness, sadness, anxiety, ego, manipulations, control issues, addictions and problems or challenges. The name ho'oponopono is the mantra; "I love you, I'm sorry, please forgive me; may all good flow to you. Thank you." By saying this in a sincere way many times to those who have hurt or upset you, you clear memories. If challenged — say money flow wor-

There is something inside me causing this challenge.” To your own heart, mind and spirit direct: “I am sorry, I love you, and (Yes you are loving self now raising your esteem and value) please forgive me. All good now flows to me. Thank you." Repeat again and again to clear memories or feelings which may restrict the flow of prosperity. Or clear anything: old hurts, relationships, health, grief, anxiety and fear. I’ve practiced this mantra with amazing results. A student at The Yoga School, was projecting her irritations and frustrations on me. After three “healings” of the mantra, she now smiles at me! She has written a supportive email. Amazing indeed! And remember whenever you embrace a problem and/or success, you are 100 percent responsible for it. Soon you will hear the words more often: “I Love You.” You will feel it! You will help our world TRUST the resonance of harming no one and keeping love safe. Suzette Scholtes has trained 100s of yoga teachers and reached 1000s of yoga students since 1984. Unleash Your Healing Potential Nancy Russell, M.D.

I

n my presentation to the annual Fibromyalgia Coalition International on May 13th, 2011 in Overland Park, Kansas, I gave an educational lecture on Unleashing Your Healing Potential. While this presentation was geared towards people with chronic health problems, it is appropriate for all who desire to be optimally well and proactive in their health care journey. As a holistic physician, the principles I strive to convey to my patients are to: 1. Get to know each person as an individual, one on one. 2. Get to the root of a person’s medical problem, rather than just treat the symptoms. 3. Personalize treatment, honoring each person’s individuality. And 4. Partnership with each person on his or her journey to optimal health. The questions that I answered in this presentation were: 1. Can I do this journey on my own? 2. Does sleep play a role in healing? 3. Can optimal nutrition change your life? 4. Does toxicity play a role in health? And 5. Is stress management helpful?

On the journey to wellness, genetics do play a role in health and predisposition to diseases. DNA however is dynamic and not static, so you can be your own engineer in how genetic make-up is expressed in the human body. Healthy lifestyles improve the expression of these genetic tendencies; while unhealthy lifestyles can damage the DNA and enhance tendencies to have a chronic health problem. The book, You-Staying Young by Mehmet Oz M.D. explains this process in detail on how to extend the warranty on the human body! Sleep is imperative for optimal health. Sleep deprivation can lead to fatigue, brain fog, decreased stamina and increased pain sensitivity. Good sleep is enhanced by a regular sleep and wake routine, staying in bed 7 to 8 hours each night, exercising regularly and minimizing caffeine and alcohol. If you have trouble sleeping, try a natural relaxant such as magnesium, melatonin or valarian root. Optimal nutrition can be life changing by eating mostly fresh, whole, unprocessed foods. Staple foods should include

vegetables, legumes and whole grains with small amounts of fruits, nuts, eggs, fish and meats. Drink plenty of filtered water; 1/2 ounce for each pound of your ideal body weight. Respect your individuality for your own nutrition by paying attention to your age, sex, ancestry, metabolic type and blood type. I challenge you to get the book, “Eat Right 4 Your Blood Type” or get the app on your smart phone and follow it for 8 to 10 weeks. Eating right for your type can help to decrease inflammation, aches and pains — and, can increase energy, immunity and longevity. If you suffer from sneezing, runny nose, gas and bloating, stomach pain, headaches or fatigue after you eat, you may have food sensitivities. To assess this possible issue, you can obtain a food sensitivity blood test measuring IgG levels to different foods or go on an elimination diet. Many people are deficient in nutritional requirements, even if the diet is very good. In general, most people need at least the following supplements: Multi-vitamin and mineral, vitamin D3 and fish oil. It is important that your fish oil is molecularly distilled to be free of contaminants. Toxicity does play a role in optimal health and toxins surround us everyday. The common chemicals that can cause toxicity in our bodies are sugar, caffeine, alcohol, refined and processed food, so keep them to none or a minimum. Toxic chemicals to completely avoid are nico-

The laws of attraction and abundance, as they relate to my business model, mean that what I need to do my work in the world will be available to me.

W

hen I was considering starting a small business I went to the library to do some research. There are many books on the subject of business startup; but at that time, I didn’t find any books that resonated with my ideas about how I wanted to organize MY business. If I were doing that research today, there might be abundant material on the shelves about business building while living in alignment with one’s values and staying clear about one’s vision; but when I was starting out, I thought I would have to write that book myself some day. I haven’t learned enough to write a business book, but there are a few basics that are working well for me. This month’s theme is “Holistic Business Models.” What is a holistic business model? Some questions to consider: ♦

♦ ♦ ♦ ♦ ♦

Are the business practices in alignment with one’s personal values? Are the principles of attraction and abundance utilized? Does the work/workplace honor its workers and its customers? Does the work help sustain “life balance?” Does the business use Earth’s resources responsibly? Does it allow for its own growth, change, transformation?

EVOLVING… A GUIDE FOR CONSCIOUS LIVING

These principles are nothing new. Most of what I practice, I learned from a very young age by watching my parents. My father taught me that maintaining ethical business practices that are in line with your personal value system is the bottom line. Fiscal responsibility is essential, but the bottom line of a financial report is not THE bottom line. I also learned that giving back to the community is an important part of doing business in the community. I learned from watching my mother. She got a big kick out of the “new” green movement that started getting attention a few decades ago. She always said that her generation had been “reducing, reusing and recycling” since the depression. She taught me to be grateful for the resources available to me, and to use them respectfully and creatively. From both my parents, I learned that people are not commodities. Each person is unique and precious. We are here – and privileged to be here – to care for each other. My childhood is where my holistic business model was grounded. I imagine there are as many “Holistic” models as there are unique individuals since each construct is based on how we can best express our gifts in the world. For my current business, I wanted to create a healing arts center with movement at its core, since that is my personal passion. Just as I approach physical work—starting from the energetic center and working outward from

there – I began building my business by clearing space energetically and holding a vision. The vision was broad and lacking in details, but I sent it into the universe with the aim of manifesting “this or something greater for the good of all concerned.” I held a vision of a group of practitioners, who were all excellent at their work, compassionate with their students, willing to work together, and passionate about the amazing design of the human body. Then I watched the law of attraction at work. The phone rang. Someone got my name and number from someone. Would I like to meet? Yes, I would. This happened again and again. Sometimes there was seemingly a good fit, sometimes not. The universe was at work and providing abundantly. There are plenty of places to practice, plenty of people practicing, plenty of people looking for practitioners. If I did not believe this, I might have to imagine that this world is much more limited and limiting than it is. The laws of attraction and abundance, as they relate to my business model, mean that what I need to do my work in the world will be available to me. I took a class in small business start up. One of our exercises was to do research on our competitors, but I could not perceive the people doing the same work I am doing as competitors. Rather, they are RESOURCES. They are amazing, dedicated and talented people in my field. If I can help a potential client find a good fit I am happy to do so, even if that means sending them to another practitioner. I recall a study done with school children. The children were seated across a game board from each other with two colors of pieces on the board. The object was to get all the pieces to one side of the board in a certain amount of time. Students in Mexico were able to accomplish this task easily and quickly by cooperating. Students in the USA were challenged and often unable to complete the task because they tended to try to get all of

what they perceived to be “their” pieces across to one side while, of course, the child on the “other side” tried to do the same. This is a beautiful illustration of how our perceptions influence our experiences. In my business model, less complicated is better. I love my simple studio. As a teacher, I look for elegance in movement; less stress and strain brings greater ease of function. Much about my approach to life and business is simple. Are you familiar with the book, All I Really Need To Know I Learned In Kindergarten, by Robert Fulghum? He offers these words: ♦ ♦

♦ ♦

Play fair Live a balanced life — learn some and think some and draw and paint and sing and dance and play and work every day some Be aware of wonder Remember the little seed in the Styrofoam cup: The roots go down and the plant goes up and nobody really knows how or why, but we are all like that.

As a teacher, I want to be filled with wonder, always learning. As a business leader I want to encourage the people I work with to pursue a balanced life. As a woman I want to enjoy people as they move through their lives without having to try to understand why. Eating Well in Kansas City Let Food be Thy Medicine — by Tracie Walker For the LOVE of Chocolate... Why do we love this superfood so much? Why does it instantly make us feel better? Why do some women have a strong craving for chocolate? Is chocolate really good for us? Where does it come from? What is cacao?

W

ell…I am glad you asked all these questions because I am here to tell you a little bit about this wonderful food! There is quite a history associated with chocolate. The origin of chocolate comes from the cacao bean (pronounced “kah-cow”) which grows on cacao trees native to Central and South America. The Mayans and Aztecs consumed this bitter fruit as part of many ritualistic ceremonies. Cacao was associated with wealth and was traded as currency in the ancient Central American civilizations. It was said that cacao made its way to Spain in the 1500’s by conquistador Hernan Cortes. Now fast forward to the 1800’s when the Europeans decided to add in the refined sugar and powdered milk to sweeten up this bitter cacao and turn it into what we are familiar with today as chocolate. Swiss chemist Henry Nestle and Swiss manufacturer Daniel Peter are to credit for the invention of the first milk chocolate bar which led to the largest food corporation in the world. I think we are all familiar with the household name, Nestle. I hate to admit it now, but one of my favorite chocolate bars growing up was a Nestle Crunch bar. So how is this ancient superfood good for us? When we leave out the refined sugar and dairy the health benefits are endless! The Cacao Bean (chocolate in its purest form) has a whole list of amazing compounds. The most well-known and beneficial property is the magnesium concentration. This vital mineral helps with practically everything! I encourage you to look it up. Cacao also has an extremely high concentration of antioxidants and we all know we need as many of these cancer-fighting friends as we can get with all the harmful toxins we are exposed to every day. Theobromine and Tryptophan are also worth mentioning as major components of the lovely cacao bean. Today, most of

Are you asking yourself, “How can this one little bean contain all this goodness and have such a rich history?” Now you can see why it is considered a Superfood. I highly encourage you to read David Wolfe’s book, “Naked Chocolate” to gain a deeper understanding of cacao. It was the source of most of my information. It also includes numerous delicious recipes. Below is one of my favorite recipes I created a couple years ago. It is on my website, www.simplyrawlifestyle.com and was developed by experimenting in my kitchen over the years with cacao powder.

Eating Well in Kansas City Eating Live, Becoming Whole — by Kat Bowie Let the Summer Celebrations and Barbeques Begin!

L

ike anyone else, I love a good barbecue. I love the gathering of friends, the sitting around with a cold drink in my hand, thinking about eating my favorite celebration foods: Potato Salad, Deviled Eggs, 7-Layer Salad, Onion Rings, Hamburgers, Carrot Cake with Cream Cheese Frosting, and Homemade Vanilla IceCream. HUH!?! Yes! This is the Raw Vegan column. You thought you were reading the wrong column there for a minute, didn’t you? Well, you are in the right place. Every one of those items mentioned above can be transformed into a raw vegan dish. Yep! It’s true! Have I ever lied to you? (You know I haven’t, so just don’t start!) Remember that the definition of being raw vegan is that there are no meat, eggs, cheese, dairy or fish and that nothing is heated over 118 degrees. So! How are these items made if they don’t have any meat, eggs, dairy, or fish? Will they taste like cardboard? Or will they actually taste like something I would really want to eat and would truly enjoy? Okay, basic cooking lesson here; if you cannot make these things taste good using the ingredients you grew up on, then you ain’t gonna magically be able to be a great raw vegan chef. Know what I mean, Jelly Bean? Transforming the dishes we grew up with into delicious Raw Vegan recipes requires being able to be a fairly decent cook to begin with and to understand the structures of cooking and building from there. But there are plenty of raw vegan cook books out there that already do that and once the basics are mastered the rest is quite tasty. So instead of potato salad, the salad is made with Jicama or parsnips or turnips or a mixture of root veggies. The Deviled Eggs, become Deviled Mushroom Caps, Onion Rings are still Onion Rings but dehydrated, Hamburgers are made from a mixture of nuts and ground veggies (don’t you dare make that face until you’ve tried one! Thought I didn’t see you didn’t you?). Carrot Cake with Cream Cheese Icing becomes a 4-layer Carrot Cake dehydrated and frosted with Raw Vegan Cashew Cream Cheese Frosting that I will put up against any carrot cake I have ever eaten or made myself back in the day. And Vanilla Ice Cream? Oh, yeah! It’s still Vanilla Ice-Cream. I keep the container

of my electric ice cream maker in my deep-freeze all the time so that when it is time to make ice cream it’s ready. I love Peach Ice-Cream, too, but my favorite is Maple Praline Pecan Ice-Cream. You can even make Chocolate Ice-Cream or Chocolate syrup to drizzle over the ice-cream. Oh, we poor, poor raw vegans…we eat such yucky food. Wanna try some of these foods without cooking? Check out the Kansas City Raw Food Union on Meetup.com or as a Facebook group. There are potlucks twice a month on the first and third Saturdays. It’s a great way to try this food. You really will be surprised, pleasantly so, I believe. And the whole reason for this lifestyle is that raw vegan food is healing, healthy, and delicious! So, my gift to you for the Memorial Day Holiday and throughout the Summer months is a basic recipe for Vanilla Ice Cream. No dairy, no gluten, no white cane sugar. So for those with dairy or gluten sensitivities, or cholesterol issues, have I got a great recipe for you! Enjoy! And Have a Great Season of Celebration!

Dr. Kat’s Basic Raw Vegan Vanilla Ice-Cream 2 C Raw Cashews, soaked 2 hours in pure water, drained ¾ C Raw Honey or Agave Nectar ¾ C Coconut Oil 2 T Vanilla Extract 1-2 C Pure Water (start with only 1 C and add more if needed to ease the blending process) ½ t Real Salt In a High-powered blender blend all the ingredients. Blend until very smooth. It needs to be rich, creamy and similar in consistency to ranch dressing (which, yes can be made raw vegan, too). Pour into a container and place in the refrigerator until cooled completely. Pour mixture into the ice cream freezer container, plug in and let the machine do its thing! You can add many optional items, peppermint leaves and raw cacao nibs, fresh strawberries, sliced peaches, or just add ½ C of raw powdered cacao and turn it into Chocolate Ice-Cream. Use your imagination and don’t forget to taste it prior to freezing to make sure it is sweet enough. You can do that because there are not raw eggs in it. EVOLVING… A GUIDE FOR CONSCIOUS LIVING

Eating Well in Kansas City Food: A Path of Awakening — by Natalie George Your Annual Health Screening

T

oday, I had my annual health screening at work. They measured my blood pressure, total cholesterol, LDL, HDL, triglycerides, glucose, weight, height and waist circumference. All of my numbers were healthy. Since this is a company-wide health screening, it has been the talk of the office for the past week as people have been comparing and sharing their results. There are quite a few of my co-workers with unhealthy readings and I’ve been surprised, disturbed, grateful and curious by the reactions. SURPRISED What surprises me the most is when my co-workers have unhealthy readings and say, “It’s hereditary!” and then do nothing about it or start taking medication. While they may be more inclined to have unhealthy readings due to genetics, what shocks me is that they do not seem to take into consideration that they were raised the same way their family members were raised and generally live and eat how their family members who have similar problems live and eat. I have two close friends who always believed that they had hereditary high cholesterol and were destined to have high cholesterol for the rest of their lives. This belief was invalidated when both of them drastically changed the way they ate, cutting out processed foods, meat, dairy

I have been encouraged by these health screenings. The majority of those with negative results are taking their health into their own hands and making significant changes in their lives. This health screening has been an awakening for them. When people make the connection to their lifestyle and their health, I smile. and refined sugar. Suddenly, for the first time in their lives, they had healthy cholesterol readings. DISTURBED What disturbs me is that some of my co-workers have gone to see their doctors after receiving their health screening results and their doctors did not talk to them about successful diets that have reversed high cholesterol and other precursors of common diseases. They recommended exercise and the elimination of soda but none mentioned the high success rate of those who embrace a diet rich in plant-based foods. When one is confronted with taking cholesterol medication for the rest of one’s life or changing one’s diet, my dream is that doctors would strongly encourage the patient with the option, and education, of diet versus medication. If you are a doctor who highly advocates for a lifestyle and diet change with your patients over medication, Thank you!

My experience has been that this kind of doctor is the exception to the rule and I’d love to see that reversed! GRATEFUL On the other end of the spectrum, I have been encouraged by these health screenings. The majority of those with negative results are taking their health into their own hands and making significant changes in their lives. This health screening has been an awakening for them. When people make the connection to their lifestyle and their health, I smile. CURIOUS Since evaluating the various reactions to the unhealthy results, I have been curious as to what would happen if people believed that their condition was in their control and could minimally be blamed on their genetics? What would happen if doctors prescribed significant lifestyle changes such as a strong plantbased diet and there were an abun-

dance of programs to support people in making these changes? What if doctors required a month of drinking vegetable juices before allowing medication to be prescribed? What if we did not have drugs to fall back on? Would we be more inclined to make changes, die prematurely or live every day feeling less than optimal? I’ve even asked myself, “What can I do?” I realize some of my questions may seem extreme but maybe extreme actions are needed right now when our population seems to be in such trouble with health.

Eating Well in Kansas City Healing Foods — by Jane Van Benthuson Magical Mint

I

n our yard we grow flowers, a vegetable garden and many herbs. When I first planted mint in my front yard a neighbor said, “Oh no! That will take over!” I'm happy to say I didn't listen and even planted more kinds of mint. It does spread some, but it hasn't taken over my world and I've never had too much of it. If you are concerned or don't have the space-you can grow it in a container. I love having lot's of mint around as it's so yummy, good for you and a very diverse ingredient. Mint is known to have originated in Asia and the Mediterranean. In many cultures, mint has been a symbol of hospitality and was offered as a sign of welcome and friendship to guests as they arrived. In the Middle East, mint tea is still served to guests on their arrival. Mint was also often used as an air freshener and was placed in rooms and temples to clear and freshen the air. The Greeks and the Romans used mint as a perfume and a bath scent, as well as using it in medicine and in cooking. Mint was so revered by the ancient Greeks that they named the plant after the mythical character Minthe. Minthe, or Menthe as she is also known, was a river nymph. Hades, the God of the Underworld, fell in love with Minthe and wanted to make her his lover. However, Persephone, Hades' wife found out and in a fit of rage turned Minthe into a plant, so that everyone would walk all over her and trample her. Unable to undo the spell, Hades gave Minthe a wonderful aroma so that he could smell her and be near her when people trod on her. Mint is useful in a variety of illnesses, including respiratory infections, allergies, colic, flatulence, nausea and vomiting, fevers, asthma, anxiety and tension, ulcerative conditions, headaches and menstrual cramps.

Bring water to a boil. Place strainer in a cup, and put herbs in the strainer. Fill the cup with boiled water. Cover the cup and steep for 10 minutes. Add honey. Take 3 or 4 times a day. It's full of nutrients too! Mint contains a number of vitamins and minerals. Mint is rich in Vitamins A and C and also contains smaller amounts of Vitamin B2. Vitamin C is an important antioxidant and may help to decrease the risk of certain cancers such as colon and rectal cancer. It doesn't take much for the vital nutrients to be obtained and be beneficial to one's health. Mint also contains a wide range of essential minerals such as manganese, copper, iron, potassium and calcium. You can also add fresh mint to your salads, salsas, chocolate shakes or ice creams and even throw a few leaves into your water bottle or a handful into your sun tea jar. I love watermelon and mint juice. Freshen up this summer and try using some mint as a healthy green for flavor, medicine and aromatherapy. You will be glad you did. Eating Well in Kansas City Books — by Marianne Williamson A Course in Weight Loss mind reclaims its spiritual intelligence, your body will reclaim its natural intelligence as well. The 21 lessons in this book will take you on a deep, sacred journey. One step at a time, you will learn to shift your relationship with yourself — and your body — from one of fear to one of love. And you will begin to integrate the various parts of yourself—mind, body, and spirit—to become, once again, and in all ways, the beautiful and peaceful person you were created to be. As Williamson writes: “When it comes to your enjoyment of eating, your best days are not behind you but ahead of you!” So get ready to begin a new relationship with food . . . and with yourself.

21 Spiritual Lessons for Surrendering Your Weight Forever By Marianne Williamson

I

f your ‘weighty thinking’ does not change, then even if you lose weight, you’ll retain an overwhelming subconscious urge to gain it back. It’s less important how quickly you lose weight, and more important how holistically you lose weight; you want your mind, your emotions, and your body to all ‘lose weight.’ Weight that disappears from your body but not from your soul is simply recycling outward for a while, but is almost certain to return. It’s self-defeating, therefore, to struggle to drop excess weight unless you are also willing to drop the thought-forms that initially produced it and now hold it in place. What is the connection between spirituality and weight loss? Best-selling author Marianne Williamson is about to answer that question for you in her groundbreaking new book, bringing you 21 spiritual lessons to help you surrender your weight forever. These lessons form a holistic paradigm for weight loss, addressing the spiritual, emotional, and psychological elements involved in what Williamson refers to as “conscious weight loss.” If you are a food addict, a compulsive eater, or someone who for any reason sees food as the enemy, this book is for you.

The 21 lessons in this book will take you on a deep, sacred journey. One step at a time, you will learn to shift your relationship with yourself — and your body —from one of fear to one of love. A Course in Weight Loss addresses the true causal root of your weight-loss issues: a place within you where you have forgotten your divine perfection. This forgetfulness has confused not only your mind but also your body, making you reach for that which cannot sustain you . . . and reject that which does. Leo (July 23 – Aug. 22) If you’re looking for a new job, this could be your month! Abundant Jupiter is opening doors for you, so be hopeful! Even your current job could offer you more pay, or suddenly become a much more positive place to be. If you’ve been having problems with a sibling, close friend or co-worker, the issue will clear up. You can also conquer negative thinking patterns, so put your meditation energy in that direction! Virgo (Aug. 23 – Sept. 22) If you’ve been having financial issues, or trouble at work, hang in there while situations clear up. Don’t do anything radical right now. Watch how things unfold and then see where you stand. Read books on spirituality and prosperity. Catherine Ponder’s Dynamic Laws of Prosperity would be a great start. The Universe wants to bless you with abundance, so open your mind to receive! Libra (Sept. 23 – Oct. 22) Any issues with relationships, self-esteem or body image will clear up. Meditation will bring solutions to even long-term problems. Your sex life will also improve. Since you’re feeling so good about yourself, you’ll be able to open up on a deeper level. You can trust your partner and the Universe too! If you’re contemplating any financial investments, you should have good luck in that area, too! Scorpio (Oct. 23 – Nov. 21) Wow! Your dreams and meditations will reveal deep stuff that keep you from bonding in relationships. These revelations could cause you to release current bonds or to give ultimatums for how things could improve. If single, you could meet someone who is part

of your new life direction. S/He will also inspire you in many ways. You’ll also be able to make deep changes in yourself so that patterns do not repeat themselves! Sagittarius (Nov. 22 – Dec. 21) In order for a current relationship to work, you need similar goals and ambitions. If you don’t connect on that level, it will be hard for you to continue. It needs to be a bigger picture than just the two of you. If single, you’ll seek out spiritually-meaningful connections. You might also start a new health regime – raw foods, yoga or body work sessions. Keep your disciplines so they don’t merely become a fad that you tried! Capricorn (Dec. 22 – Jan. 19) This will be a great month with either work or relationships. You’ll have a good balance and be able to enjoy yourself, as well as feel successful (so important for Capricorn!). Stand firm about work issues because your instincts are good, and people will see that. If single, you could meet a new sweetie. If partnered, your “old” sweetie will feel new again! Try out a hobby like art classes, dancing or sports. Have fun! Aquarius (Jan. 20 – Feb. 18) If you’ve been struggling with long-term problems about emotions and relationships, have hope! You’ll have many breakthroughs this month! Meditation can even “evaporate” some of the issues. You’ve been bombarding your troubles with faith, whether you realize it or not, and the difficulties will give way. Just keep going with your spiritual disciplines when things get better, so you can truly receive the blessings you’ve created. Pisces (Feb. 19 – March 20) You will be feeling very optimistic. Positive thinking and affirmations really change your outlook and can even create a better reality. You’ll experience healing around any issues about sexuality, intimacy and trust. If you have money troubles, you’ll be presented with a solid remedy. Just take each step and follow through on the plan. In general, your mind is open to fresh ideas, and that will benefit you in many areas! Aries (March 21 – April 19) If you’re in a relationship, see how you can allow a stronger partnership to develop in certain areas. You don’t always have to go it alone or be in charge. Your partner has a brain too — and many good ideas! If single, you could meet someone solid and dependable who is seeking commitment. Finances will also be improving since abundant Jupiter is giving you a boost in that department! Taurus (April 20 – May 20) Jupiter has moved into your sign! Celebrate this once-each-twelve-year event by doting on yourself. Make sure you are getting plenty of rest and scheduling stress relief. Walk in nature; get a massage; practice yoga. Your self-esteem will blossom and you’ll be feeling good. Surround yourself with happy people. Let go of anything you want to change since you have courage now to do it.
