Contents

Dear Friend, Introspective by nature, I frequently make life reviews. My journals help to keep a running narrative of the life-transforming events, but also the smaller, somewhat mundane events that define my days. I’ve learned that we don’t have to die to make a life review. By evaluating the high and low points of life, the major events and the small, we can pinpoint the defining moments that form the seeds of gratitude itself. In The Transformative Power of Near Death Experiences by Dr. Penny Sartori and Kelly Walsh, there’s a story by David Bennett about his experience while nearly drowning in the ocean. David wrote about his life review, “I felt as though this review of my life was meant to help me grow and evolve. Surprisingly, some of the smaller incidents in my life took on a greater importance during the life review. At the time, these incidents were forgettable, hardly noteworthy. But once I saw the after-effects, especially how my actions affected others, I became aware of the bigger picture. We are always thinking about leaving a mark and trying to make our lives matter.” I believe this life review can make us not only realize how our actions affect others, but also help to solidify that for which we are grateful. The act of gratitude itself is realized by paying attention to what we hold dear--and are accordingly thankful. Surprisingly often it’s the small things. When asked what one moment, one nugget of time in her life caused her gratitude, my friend Judy replied, “I was in high school with a convertible full of teenagers, driving through the Plaza. I pulled out in front of a man driving another car, nearly causing an accident. I expected him to be (deservedly) angry—honking, screaming, expressing his anger and frustration at my mistake. When I looked around at him, to my surprise, this gentleman offered up the sweetest smile and waved me on. I will never forget it. “I’m grateful for his gracious reaction because it actually changed my life.” Judy’s story illustrates that the smallest acts can hold the greatest meaning. So if you choose to create a life review and reflect on some of the moments that brought you gratitude, we’d love to hear your story. Horror to Hope: Grief to Action BY JUDE LACLAIRE, PH.D.

N

atural weather disasters like floods, droughts, earthquakes and, more recently the deadly hurricanes striking small unprotected islands, the United States and Puerto Rico, have left untold damage in their wake. The human suffering is incalculable and the physical damage in the billions. Over the last four years the United States has witnessed the mass shootings at Sandy Hook Elementary in Newton, Connecticut; San Bernardino; the Pulse night club in Orlando and now, the worst, in Las Vegas! As a mental health practitioner and in my personal life, I am witnessing people expressing great fear, anxiety and apprehension triggered by these events. Confronting our fears and catastrophic thinking is imperative for each of us. How can we do this? When problems arise I look to people who have faced horrific experiences and remind myself what they did to successfully face danger, threats and traumatic experiences. One of the first people I think of is Viktor Frankl. Between 1942 and 1945 he labored in four different Nazi death camps, including Auschwitz, while his parents, brother and pregnant wife perished. What he did do, not just to survive, but to have hope and live to inspire others until his death at age ninety-two, was to learn that when we have meaning or purpose in our life we can endure, confront and heal from any suffering. His training as a psychiatrist and neurologist helped him to endure his own horrific experience, finding hope and meaning in the midst of terrible trauma. His belief, prior to this experience was, “What is to give light must endure burning.” He description of an experience in the harsh conditions of the concentration camp in Man’s Search For Meaning, helps us understand his idea of finding meaning in suffering. He describes being in a group of prisoners, stumbling on rough ground, being yelled at and hit with rifle butts. It was cold and dark. He and a fellow prisoner began speaking of their wives. He began thinking of his wife and, in the fading pink light of morning, began speaking with her. He says, “A thought transfixed me: for the first time in my life I saw the truth…the final wisdom…that love is the ultimate and the highest goal to which Man can aspire.” At

that moment his life took on meaning in a profound way as he contemplated his deep love for his wife and others. Another person whose experience awakened and inspired me is Eben Alexander, M.D. He is a neurosurgeon who experienced a transforming experience in a life-threatening coma. He described what he learned in Proof of Heaven: A Neurosurgeon’s Journey into the Afterlife. “…I had already been taught the one thing-the only thing-that, in the last analysis, truly matters. You are loved and cherished. You have nothing to fear. There is nothing you can do wrong. …if I had to boil it down…to just one word it would (of course) be, simply: Love.” Another person, one from our own community, continues to inspire me and thousands of others. Mindy Corporan suffered the unspeakable loss of her son and her father in the shooting at the Jewish Community Center April 13, 2014. Jim LeManno lost his wife, Terri. Mindy, spearheading a movement called Seven Days—Make a Ripple, Change the World, has led us to think about how to respond to deep loss and grief. She says “To focus on love, understanding, acts of kindness – at least for some time during that seven day time frame. It’s something people can do very easily.” She continues, “We should not stand by and allow anyone else to be so misled by his or her ignorance of the other and let evil and hate overcome them…a wave of understanding and kindness will change our world.” In facing adversity in our lives, or witnessing it in others, it is important to find the meaning in our lives, the center of our being, the profound love and caring. An Interview with Cody Hogan, Chef de Cuisine – Lidia's

C

ody Hogan is a classic. He has always followed his instincts and, in doing so, traveled a path of two passions, food and music. As Lidia's Chef de Cuisine for over a decade, Hogan's love affair with the piano is equaled by his affinity for creating beautiful food. “I like so many aspects of working in a restaurant, but ultimately, what you’re doing is taking care of people. It’s nice to make people feel better,” - Cody Hogan

Before being distracted by food, Cody Hogan was a classical pianist. While studying music in Germany as a Rotary scholar, Cody became interested in the culinary arts and found himself a few years later working at Chez Panisse. In 1998 he began to work with Lidia Bastianich, with whom he has worked for the past two decades. Cody was recently appointed General Manager of the restaurant, but also has the enviable position of being her traveling assistant, food stylist, and the studio chef for her Emmy-nominated television program in which he occasionally appears on camera. Cody has been extremely active in promoting great local farms and products in the Midwest. He teaches regularly at the Culinary Center of Kansas City and is an avid gardener.

1. What's the difference or similarities between playing music and being a chef?

Both involve interpretation and creation. Most often, I find myself interpreting Lidia’s food, or classic regional Italian food, just like when you’re playing music written by another composer. Sometimes though, when a special ingredient comes along, then I do a little composing myself. I don’t know which I prefer, because classic recipes, like classic pieces of music, have been tested for “humming” like a well-oiled machine, or it’s teetering on generations and they are beautiful and so well thought the edge of disaster (the two are separated by a very fine out that you can’t help but enjoy them. line).

3. Toughest dish you make? The most difficult dishes are always the ones that are the most “simple.” In order for those dishes to work, everything has to be perfect: the quality of the ingredients, the handling, the presentation. And the person you’re cooking for needs to “get it.”

4. Explain a typical workday Most of my workdays begin around 11:00 in the morning. I usually work on the line or expedite lunch service. After lunch, I do any purchasing needed for the restaurant (I do about a million dollars in purchasing every year--it takes a lot of stuff to keep Lidia’s going). Then I tackle paperwork (never thought about paperwork when I was dreaming of being a chef), work on a special for the evening or maybe do some menu development with executive chef, Dan Swinney with whom I’ve worked for 18 years. Then I run dinner service. The most rewarding and stressful aspects of the day occur during dinner service when everything is

5. What's wrong with the way people eat today? Everything is out of proportion. Too much protein on the plate. Too many refined carbs. Too much processed food. In America, the attitude seems to be that “more is better,” but that seems to be slowly killing us. The Mediterranean model with smaller portions of everything, especially animal proteins, and more diversity makes more sense to me. What makes it difficult for most people is that they simply don’t know how to prepare vegetables and other whole foods. Somewhere along the way, Americans forgot how to cook.

6. If you could eliminate something from the menu, what would it be and why? I would love to remove that silly warning the Health Department requires us to have on the menu about raw or undercooked food increasing your risk of food-borne illness. I love what I saw on a local menu: “Everything on our menu can do your body harm, rather undercooked, and overcooked, or in vast quantities. n our fast-paced culture, and with our busy lives, it’s helpful to have healthy snacks on hand at all times in case you find yourself in a pinch. Though you can find various forms of snacks or treats at most gas stations and grocery stores, they are not all created equal and eating many of them may leave you feeling worse than you did before. As a Certified Health Coach, I’m often asked for recommendations of healthy snacks for when clients are on the go. Surprisingly, even health food stores have very few snack bar options that aren’t loaded with added sugar, gluten, soy, and other preservatives. So, be picky when you are looking for your snack options. Just because you found something at a health food store, doesn’t mean it won’t spike your blood sugar or leave you feeling icky all afternoon. Here are a few health-coach approved snack ideas to get you started:

Treat the Causes, Not the Symptoms of Irritable Bowel Syndrome BY NANCY RUSSELL, M.D.

T

here are several approaches to irritable bowel syndrome (IBS); getting to the root of the problem is the best goal. Conventional medicine defines irritable bowel syndrome as a group of symptoms including abdominal pain and changes in bowel movements patterns without any evidence of underlying damage. These symptoms occur over a long period of time, often years. IBS has been classified into four main types depending on whether diarrhea is common, constipation is common, both are common, or neither (IBS-D, IBS-C, IBSM or IBS-U respectively). Holistic, integrative and functional medicine physicians assess for possible causes so as to diagnose and treat underlying issues. Disorders such as anxiety, major depression, and chronic fatigue syndrome are common among people with IBS. Other common names for IBS are spastic colon, nervous colon, mucous colitis and spastic bowel. The frequency is 12.5 percent of the population in the developed world. It is twice as common in women compared to men and typically occurs before age 45. To evaluate the situation of IBS regardless of symptoms would be to start with a full blood examination: complete blood count, metabolic panel with liver panel, C-reactive protein, and celiac disease panel. Abdominal ultrasound to rule out gallbladder, liver and pancreas problems is imperative. Endoscopy by a gastro-enterologist specialist to rule out stomach ulcers, celiac disease, helicobacter pylori infection, inflammatory bowel disease, polyps and cancer is the next step. If this evaluation does not reveal an answer or only partially relieves the symptoms, continue to investigate further. Even if celiac disease is not diagnosed, foods may be aggravating the symptoms. Food allergies are diagnosed with IgE blood tests or skin prick allergy testing. Another form of food reaction, called food sensitivities or food

intolerances are somewhat controversial but can be diagnosed with IgG blood tests of other immune mediator testing. Whereas food allergy symptoms consist of hives, swollen throat or even life threatening symptoms, food sensitivities are more delayed reactions from a few minutes to more than 24 hours after ingestion and mimic IBS symptoms, as well as potentially causing sinus congestion, fatigue, headaches, skin rashes, etc. Food sensitivities may be the tip of the ice berg and underlying issues can be assessed with comprehensive digestive stool analysis, hydrogen breath testing, and evaluation of potential medication or supplement side effects. Comprehensive stool analysis can assess for maldigestion, malabsorption, abnormalities in metabolism, bacterial overgrowth, yeast and candida overgrowth, inflammatory disease markers, and parasites. Other issues to be considered that can mimic IBS are endometriosis, interstitial cystitis and bile acid malabsorption. For treatment of IBS, the first step in a food elimination diet based on the blood testing or eating a low FODMAP diet. The FODMAP diet restricts various carbohydrates which are poorly absorbed from the small intestine, as well as fructose and lactose. To avoid being on these diets long term, many people can treat the underlying causes and gradually resume eating many of the foods restricted initially. Underlying causes may be SIBO- small intestinal bacterial overgrowth, candida or other yeast overgrowth and/or parasites. These situations are treated with proper nutrition, probiotics, prescription and/or herbal antimicrobials for at least six weeks and usually longer. Fiber and prescription medications can help or hinder IBS people. For constipation, not improved with increasing water, exercise and better diet, soluble fiber at up to 20 grams a day can be helpful. Fiber may aggravates some people’s symptoms. Proton pump

inhibitors, PPI’s, such as Prilosec, Protonix, Nexium, etc. can aggravate IBS as it blocks over 95 percent of normal acid produced and prevents adequate digestion of some foods. PPI’s may also cause bacterial overgrowth leading to IBS symptoms. Sedative-hypnotic drugs like benzodiazepines, such as Valium, Ativan, Xanax can have a side effect in some people that mimics IBS symptoms. Many medications are used to treat IBS symptoms that give temporary relief include laxatives, opiod analogs, serotonin meds, antispasmodics, tricyclic anti-depressants, and domperidone. These medications are generally for symptoms. Functional medicine approach would be to treat with nutrition, stress relief, probiotics, herbal remedies, prescriptions

when needed and acupuncture. These would be guided by blood testing, stool testing and nutritional testing. Attitude of Gratitude as a Spiritual Path

A

n Attitude of Gratitude may be one of the most common threads to all religions, as either a path or a goal. In MSI’s commentary on the Yoga Sutra’s of Patanjali (considered the most ancient document on consciousness), MSI indicates it is both: “What is the ultimate use of the intellect? To decide to appreciate rather than condemn. The last step is also the first.” An Attitude of Gratitude is more than thinking three things to be grateful for at the end of each day. An Attitude is something that is inherent and constant. The Bible describes an Attitude of Gratitude succinctly in Ephesians 5:20” Giving thanks always for all things unto God.” Science is finally beginning to catch up with religion. Grateful people are happier. Research shows that gratitude leads to a stronger immune system, healthier blood pressure, greater joy, optimism, and sense of overall well-being, acting with more generosity and compassion, less aggressive, lower levels of stress hormones in their blood, and feeling less lonely and isolated,. With this many benefits for short time periods and activities, imagine what a permanent Attitude of Gratitude could do. Just searching for what I am grateful for helps the brain by upping the neurotransmitter dopamine (similar to Wellbutrin without any side effects) as well as increasing serotonin in the anterior cingulate cortex (similar to Prozac). Let’s face it, sometimes we don’t FEEL grateful! This is important to notice but still move forward. Gratitude can be cultivated. Choosing by faith to thank God in spite of intense feelings of depression, disappointment, or anxiety is deeply spiritual. If you wait until you feel grateful to thank the Creator, you will feel less and less grateful. But if you choose to thank Source regardless of how you feel, you will feel more grateful more often. Our mind can only do one thing at a time; this may be a curse, but it is also our great blessing. We can choose to follow the stories in the mind (“they did this to me…” or time spent in judgement of others or our circumstances), or we can find something to appreciate. Turning to

gratitude releases us from anxiety; we cannot be stressed/anxious and grateful at the same time! It is important to realize the connection between the mind and the body. Everything that happens to the mind also happens to the body, but the mind is supreme. While we may experience a feeling such as anger (in the body), with our mind we can forge a new brain/body stimulus via appreciation or gratitude (see Upward Rising Current). One of the greatest natural laws is, “what we focus on grows”. Focus on gratitude opens you to new synchronistic possibilities. Everyone has shadows that keep them from experiencing the Light that is around at all times. It is important not to ignore these shadows or feelings, as that doesn’t get us anywhere. In Enlightenment MSI states, “with praise alone, one can completely erase all selfdestructive beliefs and internal programs.” In practice, I was amazed as I began to expand consciousness through Praise, there was enough “space” inside to experience both appreciation even while experiencing anger or sadness! Notice the focus on Appreciation, not getting rid of the so-called negative feelings, for the latter puts the attention on the negative feelings! A friend of mine who committed to a practice of Gratitude, I will call John, was called into his boss’ office one day. As much as he thought John a wonderful employee, they had decided to eliminate that function from the office. Even as his boss was giving him the news, he was using his practice. Finding an openness through gratitude, John realized that he took this job to prove to his family that he was capable of it. Before the boss finished speaking, John was able to move on. Had he not had a practice of Gratitude, he could have gone through a lot of emotional stress and trauma, possibly becoming a victim to his life. Instead, he was ready to move on to find greater purpose in his life. Max Lucado illustrates another aspect of gratitude with one of his parables. One day, someone knocks on your door and gives you $100. You are pretty grateful. The next day, it happens again. Still grateful? Probably. However, after this

happens daily for a week or so, you are standing at the door awaiting your $100. What happens if they bypass your door and go to the next house to give them your $100? In the daily rhythm of life, it is easy to feel entitled to our status, health, wealth, etc. Another natural law is that with every desire, the outcome is present; with every problem, the solution is there. Why do we not see it? Most often we are locked away from our faith due to judgement, and cannot even see what is already manifest around us, let alone the possibilities that we could create. If life is difficult for a time, it is important to remember this: As in the book/movie “The Shack,” Papa says that even though evil things happen, God is not orchestrating or creating them. However, God still has the ability to work through them to create good in your life, even in spite of the circumstances. Gratitude helps us be open to that Good to come in. The only monument in the world built to honor a bug is located in Fort Rucker, Alabama. The Mexican boll weevil invaded Southeast Alabama in 1915 destroying 60 percent of the cotton crop.

In desperation, the farmers changed their crop to peanuts. By 1917 the peanut industry had become so profitable that the county harvested more peanuts than any other county in the nation. In gratitude, the people of the town erected a statue and inscribed these words, "In profound appreciation of the boll weevil, and what it has done as the herald of prosperity." Good can come through any circumstance if we let it. Every day, we are either expanding or contracting. Many options are available to “work on ourselves” to increase faith, develop compassion, improve our behaviors, be more loving, etc. Alternatively, all of these are accomplished as a by-product of the focus of mastering the Attitude of Gratitude. The Simplicities of Gratitude that Uplift Us

I

dentifying things to be grateful for is an assignment frequently heard and read in our times. Books exclaim the rewards to be discovered when pinpointing these ditties, podcasts proclaim the advantages to be reaped, and many coaches base their practices on the concept of gratitude. Succinctly put, Marie Forleo the coaching maven of marieforleo.com reveals, “Gratitude attracts more reasons to be grateful.” Yet in my own practice of mediumship, I find that for a number of people who are grieving, depressed or otherwise sad, identifying things to be grateful for can be a cumbersome task. It is for those who struggle with ferretingout things they appreciate and are thankful for, that I write this article. Too,

it is written as a reminder of the importance of practicing gratitude, that others should find this piece of assistance. Finding what’s good in life comes quickly to some, while others struggle with the search for the good. As I scribe this article, it is post-severe hurricanes in the United States and islands south, with another on the way. It is the week of the Las Vegas massacre. Atrocities seem to be increasing in frequency and intensity. It is during these challenging times that rising above the awfulness is particularly important. Doing so not only elevates our own energy, but adds to the collective Spirit-of our Universe. It is one-little-bit that we do have control over. It is a contribution that we can make. Media coverage includes death, destruction and mayhem. Yet at the same time, the human response of goodness, kindness is overwhelming. Thank you for the love of people their time, resources, talents and thought. Fact is, in spite of nasty weather, we are surrounded by beauty in Nature. At this time of year fence lines can be searched for the glimpse a spider creating a web, and laying eggs. What a detailed process to be found! Be grateful for the opportunity to observe it. Sunshine can be blinding in it’s magnificent power. Feel it’s warmth and be grateful. Viewing a dairy cow in a field be grateful that it is out on the range roaming free, eating grasses that early on in the season were warmed by the sun, and fed by the rain. Thank you sun. Thank you rain. Thank you grass. Thank you cow. A mama birthed that cow; thank you Mama! The farmer owns and cares for the cow, collecting milk to be processed into a

variety of products the consumer benefits from. There are drivers who transport the milk to a dairy where employees use equipment invented by a genius, to form the cheese, the milk, the cream, etc. Containers and packaging likewise are invented, manufactured and delivered. The employees mostly are transported to the dairy by their own vehicles. What a wonderful country we live in where transportation is available to the masses, and mass transportation fabricated and used. On and on and on the obvious presents for our acknowledgement and gratitude. Yet, we miss it. We see the dairy cow in the field, and perhaps we think, “Oh. A cow,” as we continue on. Plucking just one thing out of that field - the blade of grass, the cow, the farmer, etc. and being grateful is so important. Give this exercise that back-tracks one through things to be grateful for, by choosing anything as a starting point. “Think left and think right and think up and think high. Oh, the things you can think up if only you’ll try,.” Dr. Seuss encourages us! Many years ago I was driving in a funeral procession of a fallen police officer with that jurisdiction’s States Attorney. As he lamented about the responsibility of his job as the chief law enforcement officer of that area, he wondered aloud the degree to which the general public cared about those that serve their communities. I said, “Do you realize the people that do wish you well?” He became still. I continued, “In countless churches every week, in collective prayer, people pray for elected officials, among many other people and things.” This was a new consideration for him. Prayer and church certainly are not everyone’s cup of tea. However, the point is: all of the time in the World people are praying or thinking or meditating about YOU. We pray for the hungry, the disenfranchised, the needy, those hurt and depressed, the physically and mentally ill. We pray for our neighbors, our co-workers, emergency responders, and doctors and other helpers. This holds us up. Gratitude and prayer hold us on common ground in a World brimming with differences.

Anger and hatred hold us back from being grateful. Buddha proclaimed, “Holding onto anger is like drinking poison and expecting the other person to die.” Anger and hatred can be reframed with searching our souls. Plucking something good out of something opposite can be achieved. This may require intestinal fortitude. Instead, when we turn anger into gratitude, we affirm to the Universe that a life, or a thing, or an action are valuable. Joanna Hunter, a soul -centered business coach and, selfproclaimed ‘Mistress of Woo Woo’ notes, “I am surrounded by beauty and abundance.” Her constant awareness of this equates to part of the base from which she approaches the world. In her book, Get Selfish - The Way is Through, Hunter capitalizes on the premise that gratitude is the basis of a great life, resulting in the abundance we seek, and even more. As we catch ourselves with negative thinking, writing, or using non-productive speech, Forleo cautions, “What we say to ourselves in the privacy of our own minds matters.” Marcus Aurelius, (121 180 A.D.) remarked, “When you arise in the morning, think of what a precious privilege it is to be alive - to breathe, to think, to enjoy, to love.” Hunter suggests something similar, suggesting upon waking, “I am excited about today,” while noting things she’s grateful for. “Love is simple,” a lovely song written by k.d. Lang from her album Hymns of the 49th Parallel” (2004) could have been easily retitled, “Gratitude is Simple.” It is simple. Gratitude is free. The plethora of subjects for it are plentiful. Noting gratitude is a process of awareness about ourselves and our World. Changing the way we think by making note and acknowledging gratitude uplifts us, and uplifts the World.
