The Power of Aquafaba

You’ve probably heard this word before but here’s an actual guide on what it is and how you can use it. Aquafaba is the viscous water in which legumes like chickpeas have been cooked. The water, most popularly used from chickpeas, is used as a substitute for a number of egg-based dishes. Aquafaba is easy to use and while you enjoy your chickpeas, you can make something easy and tasty on the side.

Here are 3 quick and easy recipes you can use with aquafaba:

VEGAN MAYO

All you’ll need is 3 tbsp of aquafaba, 1 tsp Dijon mustard, 250ml sunflower oil, 1 tsp white wine vinegar & a pinch of salt and pepper. Whisk up the chickpea water and mustard until frothy then slowly add the oil and emulsify. Finish with the vinegar and seasoning

VEGAN BUTTER

You’ll need 3 tbsp of aquafaba, 7 tbsp coconut oil, 4 tsp olive oil, 2/3 tsp apple cider vinegar and 1/3 tsp salt. Add melted coconut oil & olive oil slowly to aquafaba and blend using an immersion blender. Blend until you achieve a thick mayo like consistency. Pour it in a container (don’t cover it) and put it in the fridge overnight.

VEGAN MONKEY SOUR

You’ll need 45ml of whiskey, 30ml lemon, 15ml simple syrup, 30ml of aquafaba and a dash of angostura bitters. Put everything in a shaker except the bitters. Shake vigorously, add the bitters then transfer in a glass with ice and garnish with lemon peel.
