French Toast with Peaches and Fromage Blanc For the Vanilla fromage blanc 250g fromage blanc 1 to 2 tablespoons of maple syrup ¼ teaspoon of vanilla seeds For the peaches 4 yellow peaches, halved, stones removed 4 teaspoons of coconut oil 4 teaspoons of unrefined sugar 1 vanilla pod, seeds removed For the French toast 3 large eggs 225 ml whole milk Pinch of salt 1 tablespoon of sugar 8 slices stale challah bread or other rich bread or lovely white bloomer, sliced 1-inch thick 2 to 3 tablespoons butter or coconut oil for frying 3 to 4 tablespoons of cinnamon sugar for dusting Preheat your oven to 180c. Start by roasting your peaches, place the peach halves in an oven-proof dish, cut side up, top each half with ½ teaspoon of both the coconut oil and sugar. Dot each peach with a dab of vanilla seeds. Place into the pre-heated oven and roast for about 20 minutes. While the peaches are cooking whip up the vanilla fromage blanc by placing all the ingredients for that into a bowl and whisk thoroughly. Place the bowl into the fridge to chill while you make the French toast. To make the French toast…. Whisk the eggs, milk, salt, and sugar in a largish dish with sides until the egg is completely incorporated into the liquid.Ready your cooking space: Place a frying pan on the stove over medium-low heat. Move the pan with the egg mix next to the stove. Soak the French toast: Place four slices of bread into the egg mix to soak for one minute. Flip the slices and soak another minute. Cook the French toast: While the bread is soaking, add 1 tablespoon of butter or coconut oil to the pan. When it starts to foam, tilt the pan to completely coat the bottom. Lift one piece of bread from the egg mix and hold it briefly over the custard to let any excess drip off. Lay the bread gently in the frying pan. Repeat with additional pieces. Flip the French toast: After a few minutes, peek under a slice of bread to see if the French toast has turned golden and browned. When it has, flip each piece and continue cooking. Monitor and adjust the heat so the toast doesn’t burn.Soak the remaining bread: When the first batch has nearly finished cooking, place the remaining four slices of bread in the egg mix to soak, one minute per side. Cook the second batch: As the first batch of French toast finishes, transfer the pieces to a serving platter. Wipe out the frying pan. Return the pan to the flame, add 1 tablespoon of butter or coconut oil and cook the second batch of French toast as described above. When all the French toast is cooked, simply dust the toast with a little cinnamon sugar and serve with the roasted peaches and chilled vanilla scented fromage blanc.

Beef with Button Mushroom & Red Wine Pie I love this pie; it is a proper beef pie with gorgeous gravy and masses of flavour; guaranteed to satisfy. I like to serve it with mash and Savoy cabbage.
Serves 6-8 1.5kg Chuck Steak 115g Pancetta 30g Flour mixed with ground black pepper 4 tablespoons olive oil 1/2bottle full-bodied red 1/2pint beef stock Bouquet garni of thyme, parsley and rosemary Freshly ground black pepper about 20 pearl onions 225g button mushrooms 30g butter 450 g good quality Puff Pastry 1 beaten egg
Preheat the oven to 180C/350F, gas mark 4. Cut the pancetta into little sticks and blanch them in boiling water for 5 minutes – this makes the flavour milder and takes out some of the salt. Meanwhile cut the beef into large cubes, about 4cm across; if you make the pieces smaller than this, they seem to lose some of their succulence before they are tender. Coat the pieces thoroughly with seasoned flour. Dry the bacon and brown it in half of the olive oil in a flame proof casserole dish. Remove the bacon and brown the meat in the same fat, adding a little more oil if necessary and putting in enough pieces to cover the bottom of the pan fry in batches, set the meat aside. Add 1/2 the wine and bring it to the boil, deglase the pan . Add the meat, bacon and the rest of the wine and just enough of the stock to leave the top halves of the uppermost pieces of meat showing above the liquid. Add the bouquet garni, stir , season with pepper and simmer in the oven for 1 1/2 hours. While the meat is cooking, peel the onions and simmer them in the remaining stock for 5 minutes. Then brown the onions and mushrooms in the remaining oil and the butter, stir them in with the meat. Heat through gently, taste for seasoning. Put the mixture in to a pie dish, ensuring the meat is piled high in the centre to support the pastry. Place the sheet of pastry over the top, and cut to size, decorate and brush the top with the egg. Place in preheated oven 180C/350F for 30 minutes, until pastry is golden brown.
