STUFFED AUBERGINES Aubergines are at their best at this time of year, so make the most of this delicious vegetable with this recipe filled with flavour & warm spice. Perfect for a vegetarian main course dish with salads; it also goes fantastically well with lamb or chicken. Preheat the oven to 180°C (160°C Fan) Slice the aubergines in 2 lengthways leaving the stalk on & using a small sharp knife cut the flesh in a cross hatch pattern, going as deep as you can without puncturing the skin. Place on a baking tray or oven proof dish, season with salt & pepper and drizzle with olive oil. Add the whole bulb of garlic into the dish and place in the oven on the top shelf for 40 minutes. In a large bowl, combine the spices, raisins, pomegranate molasses, ¾ of the walnuts, ½ the feta and ¾ of the mint, leaving the rest aside until needed. Once the aubergines are cooked & soft, cool a little & then gently scoop the flesh out of the skins into another bowl, keeping the skins intact. Remove the garlic from the oven - it should be soft to touch.

SER V ES 4 2 large aubergines Maldon salt & freshly ground black pepper 4 tbsp of olive oil 1 bulb of garlic 1 tsp ground cumin 1 tsp ground cinnamon 1 tsp ground coriander 110g raisins 2 tbsp pomegranate molasses 120g walnuts, broken into pea sized pieces 160g good quality feta, cut into tiny pieces 20g fresh mint, finely chopped

Peel the garlic & discard the skin. Crush the garlic cloves with the back of a fork until you have a smooth paste.

Drain the aubergine if it has excess liquid and then combine with the garlic, whisking with a fork until blended & smooth in consistency. Combine all the ingredients stirring well. Place the aubergine skins on your favourite platter and fill with your mixture. Before serving scatter over the remaining walnuts, feta & mint.

SILKY LEMON CHEESECAKE A tantalisingly light & silky cheesecake. Make the day before allowing time to set, freeing you up to spend time with friends. Line the base & sides of the springform tin with baking paper. I use tiny bits of butter to make it stick and stay in place! To make the base: melt the butter in a small pan and blitz the biscuits in a food processor or crush until you have sand-like consistency. Once this is done, add the butter & salt to the biscuit crumbs and combine well. Scoop the mixture into the cake tin and using the back of the metal spoon, smooth & flatten until you have an even buttery disk at the bottom of the tin. Pop in the fridge for half an hour. Preheat the oven to 140°F (Fan 120°F).

SER V ES 8 24cm springform tin 150g butter 300g ginger biscuits (or digestives) A pinch of salt 500g Philadelphia Cheese, at room temperature 100g double cream

Place all the remaining ingredients in a bowl & either using a hand-held whisk or a stand mixer, blend until smooth and lump free.

120g golden caster sugar

Your cake tin needs to be waterproof so wrap the cake tin in a couple of layers of cling film & then a layer of tin toil. Place the cake tin in a large, deep roasting tin and pour the cream cheese mixture into the cake tin. Give it a bit of a shake so that the bubbles come out and it smooths.

1 tsp vanilla extract

4 eggs & 2 egg yolks Grated zest of a lemon Juice of 1/2 a lemon

Very carefully pour boiling water into the roasting tin being very careful not to go over the foil case; it is essential that no water gets inside the cake tin. Pop in the oven for 35 minutes without opening the door and then turn off the oven & leave in for 2 hours. Cool then refrigerate overnight.

When you are ready to serve, decorate as you please – I used blueberries & mint leaves for this one.
