Oct–Nov Welcome back to Hunter Valley Wine Country! When we uttered those words in our first issue back after 2020's infamous lockdown, we mentioned 2020 not going down as our all-time favourite year in the Hunter Valley. Now we'll add 2021 to that list! The second closure of most of our local tourism-based businesses and cancellation of all of our events due to Covid-19 restrictions has undoubtedly taken a toll on our region. But we're a resilient lot, and we've once again flung open our gates and doors, dusted off the counters, stocked the refrigerators and are ready once again to wow visitors with a unique and memorable Wine Country experience. So dust off the self-isolation cobwebs and hit the wine trails because we've been waiting for you! It may be 'Wine Country', but the region doesn't just cater to wine connoisseurs or foodies – it's also the perfect destination for a family-friendly holiday, with ample activities and plenty of fresh air to keep the kids both entertained and healthy! This month we welcome a new family-friendly offering in Wine Country – Hunter Farm and 4 Pines Brewery at Hunter Valley Resort (pictured on this month's cover). It may have been lousy timing (ok, it definitely was) – but the crew used the subsequent downtime to fine-tune the experience and are ready to welcome visitors to an experience that showcases absolutely everything that's great in the Hunter Valley – all in one place. he folk behind Hunter Valley Resort have hit the ground running. They can finally swing open their farm-gate, having initially opened their incredible new Hunter Valley venue on the property just a week shy of the 10-week lockdown. Not to be deterred, property owners, the Helé family, who always have a glass half full approach, decided to approach the enforced 10-week spell as an opportunity to perfect their offering. With the benefit of time, they have been able to put the finishing touches on the new 600 square metre taproom, bistro and cellar door and add to that a complete farm-life experience ready and rearing to go for one and all. So if you're busting to down a beer with your mates or sip a Semillon in the sun with your gals, keen for a family escape or getting the gang back together, no matter the occasion, you'll find there is something for everyone at Hunter Farm.

It's a farm-come resort and taproom with bistro and adventure centre all in one. It's a kind of wonderland for lovers of the Hunter Valley and all it has to offer. It's something we could all use right now. Hunter Valley Resort is the Hunter Valley's longest continuously operating hospitality venue in Wine Country, having celebrated its 30th anniversary on 1st August 2021. Keen to take things to new heights, they announced an alliance with the iconic northern beaches 4 Pines Brewing brand and opened the regions most extensive craft beer and dining outlet just behind the former brewery site on Hermitage Road. The Helé family have long been associated with hospitality. Hailing from Denmark, the Helé's great-grandparents owned the famous Grand Hotel in Copenhagen. Their hotelier grandparents built The Richmond Hotel and were the official caterers to King Frederik IV of Denmark and Queen Ingrid for many years, while their parents both worked for the Hilton Hotels group worldwide until settling in Australia in the 1960s. So it's hardly surprising that fourth-generation hotelier Philip Helé followed in their footsteps. "This newest venture could be my family's greatest innovation," says Philip. "After years of owning hotels such as The Sackville in Balmain, The Ascot Inn + Fox & Hounds in Wahroonga, Bel Air Hotel in Newcastle and The Yachtsman in Lake Macquarie, we singlehandedly took pub dining to a new level by presenting high-quality local produce together on a buffet. "Top quality Australian beef, fresh, crisp salads and local condiments. You can't get more quintessentially Australian than that." In 1991, the family purchased the Hunter Valley Resort on Hermitage Road, bringing bistro dining to the Hunter Valley. Now, to mark their 30th anniversary in the Hunter, the Helé's are taking bistro dining up another notch, teaming up with 4 Pines Brewing to bring their established brand to the Hunter Valley. Motorcycle Awareness Month

is an initiative of the Motorcycle Council of NSW, which runs in October. To coincide with this important initiative and also raise awareness of motorcycling safety on our local roads, several local councils have come together to launch Motorcycling the Hunter.

The 2021 publication showcases the best routes for motorcyclists in the Hunter and has been developed by Cessnock City, Maitland City, MidCoast, Muswellbrook, Port Stephens, Singleton and Upper Hunter councils with input from active motorcycle riders. Cessnock City Mayor Councillor Bob Pynsent said Motorcycling the Hunter is aimed at ensuring a motorcycle trip to the Hunter is both enjoyable and safe “The Hunter is home to some of the most popular motorcycling routes in NSW. Sadly, in the five years between 2015-2019, there were 1,479 crashes with motorcycle involvement in the Hunter region,” said Mr Pynsent. Motorcycling enthusiasts across the Hunter are set to benefit from the new guide, which showcases the most popular motorcycle rides in our region — from pristine coastlines to wine country roads and beyond. Recycled materials a hit with guys! WORDS DI VON ESSEN

No doubt we all have at least one man in our life that is difficult to buy for, making birthdays and Christmas just that little bit more stressful than they need to be. Marieke Treloar, the creator of Sir Stag Men's Jewellery, says she was inspired to design unique jewellery and accessories for difficult-to-buy-for men after working part-time as a sales assistant for a major jewellery chain and seeing the total lack of originality in relation to men's pieces. Sir Stag pieces are all designed and hand-crafted in the Hunter from a variety of materials, including precious and semi-precious metals like gold, sterling silver, titanium, stainless steel, aluminium, brass and copper, as well as recycled materials, natural materials like wood and leather, precious and semi-precious gemstones and contemporary materials like resin, ceramics and plastics. Each piece is created using various traditional jeweller's techniques, including organic casting, lost wax casting and hand fabrication, and where possible, materials are sourced from locally owned and operated suppliers. Marieke says she has a definite preference for recycled materials. "It's a privilege to be able to take a piece of copper pipe, not useful to its original purpose and turn it into a beloved piece of jewellery to be worn and enjoyed," she said. "When I was working in jewellery retail, the commercial pieces available for men all seemed to be too lightweight, and the designs were very sterile. I became aware that while not many men seem to wear jewellery, it was more about them not finding pieces they could relate to or sometimes it was as simple as they didn't fit or feel right. The idea of creating mainly for men stuck with me, and that embryo of an idea finally became Sir Stag."

This experience has been the guiding force for Marieke in the design process. "I have some hard and fast rules when it comes to my creations. Firstly, I try to use as many recycled materials as possible. Secondly, I source as much as possible of the raw materials from local suppliers. Thirdly, it's about creating short runs or, better yet, one-ofa-kind pieces that tell a story and finally, the pieces need to fit and feel suitable to the wearer," she said. Marieke says that one of the reasons she loves creating jewellery is the variety each day brings. "There are an enormous amount of techniques, style and materials involved. One day I might wield a hammer to beat a piece of metal to shape, and the next day I could be carving in wood or even working with plastics. It's never boring, and there is always something new to do or learn," she said. "I am hoping to bring a smile to many and reduce the headaches for the friends and family of those men that are just so hard to buy for." What is it that causes us, at times, to have a visceral response to a taste, an observation or a feeling?” Therese says that choosing artists to invite to hang work in the Emmas Cottage Gallery is complex. “There is no real process for choosing. We tend to exhibit the same group of artists as they are familiar with the space, the distance constraints of some display walls and the level of light,” she said. “What I have to avoid is choosing work which reflects my own personal style. As a result, I can’t move in any one direction as much as I would sometimes like to, and it often surprises me which art piece from a new exhibition sells first.” It’s time to enjoy the beautiful things in life. WORDS QUENTIN VON ESSEN Red wine has been making in-roads in Australia for many years, and today, there are more varieties of red wine available than ever before. Australia's red winemakers are some of the world's finest, and leading wine regions, such as the Barossa, Clare Valley, Hunter Valley, Margaret River and the Freycinet Peninsula in Tasmania, are producing wine from a growing number of grape varieties. The world's classic premium red grape varieties are all found in abundance in the Hunter Valley, where some of the oldest vines and most prominent names in Australian wine can be found. Here, the warm climate and deep friable loam and red duplex soils of the Hunter Valley produce superb examples of Cabernet Sauvignon, Pinot Noir, Merlot, Shiraz, Petit Verdot as well as an increasing number of Mediterranean varieties that include Tempranillo, Sangiovese, Barbera and Nebbiolo, to mention just a few. Whatever you're looking for, the Hunter Valley provides a diversity of red wines just perfect for those looking for something different. Shiraz is the Hunter's premium red variety and is tremendously flexible in its ability to adapt to almost any combination of climate and soil. The typical young Hunter Valley Shiraz is a medium-bodied wine showing red and dark berries, spices and a great deal of tannin. However, its real character is seen in wines with longevity. With age, the wines become a far more complex, full-bodied, yet smooth and richly flavoured wine with some earthy tones. Cabernet Sauvignon is the world's most loved red wine and is renowned for its ability to age for decades at a time. As a result, this classic red variety of Bordeaux is second only to Shiraz in importance in Australia. Cabernet Sauvignon wines can be medium to full-bodied, elegant, aromatic and a rich bouquet with fruity notes of black cherries and currants and herby notes of peppers and olives. Described as "the most romantic of wines'' due to its sensual and gratifying perfume and considered by many to be the next "wine fashion", Pinot Noir tends to be light to medium in body with a broad range of

textures and flavours, including a variety of complex aromas reminiscent of black or red cherry, raspberry, currant and blackberry. While widely considered to produce some of the finest wines in the world, it is also highly reflective of its terroir, with different wine growing regions often producing very different wines, which makes vineyard site selection an essential factor. In Australia, Merlot is one of the most important red grape varieties - coming in third after Shiraz and Cabernet Sauvignon. Originating from Bordeaux in France, Merlot is renowned for its wonderfully fruity, well rounded, even fleshy character and is grown in just about every wine growing region of Australia. The summer heat of the Hunter is considered to provide the ideal growing conditions for this versatile grape variety. Hunter Valley Merlot has experienced a surge in popularity in recent years, with a vibrant bouquet providing one of the most pleasurable wine experiences. Tempranillo is a premium grape variety originating in the Rioja region of Spain, where it is often blended with varieties such as Graciano, Grenache and, to a lesser extent Cabernet Sauvignon. Tempranillo wine is now being made in many wine regions throughout Australia - including the Hunter Valley. What makes this variety so exciting is that it is an easy-drinking, medium to full-bodied wine with lower acidity and full fruit flavours that match well with a wide range of foods. The wine itself is ruby red in colour, while the aroma and flavours can have plum, cherry, strawberry, and herb characteristics. Originally from the Bordeaux region of France, the bold-yet-floral expression of Petit Verdot is something that all red wine enthusiasts should have the opportunity to try. In Australia, Petit Verdot is being planted in warmer climates such as the Hunter Valley, where it produces full-bodied wines with concentrated flavours and integrated tannins. Here ripening on the vine is not such a problem, and while still used in blends, it is increasingly bottled as a single varietal stand-alone wine.

The Rosé Renaissance

There’s no denying it – we’re in the midst of a revolution. A Rosé revolution! Rosé; Rosato; Rosado; Rosewein; Różowe Wino... no matter what you call it, there’s no denying the appeal of this wonderful wine style, even more so with the warm weather in full swing. It’s the trendy summer tipple that’s been sweeping the wine-drinking world in recent years. Whether it’s popping a bottle of sparkling pink or sipping on a glass with some seafood, people can’t seem to get enough of it, and it’s become one of the fastest-growing wine categories in the last five years, with the most significant markets being the US, France, South Africa, Denmark, and Australia. The origins of Rosé winemaking can be traced back to ancient Greece, when much of the red wine produced was pale red. By mid-100 B.C, the Romans had popularised darker red wines in Europe, but Rosé wine remained popular in parts of France – most notably, Provincia Romana, which is today’s Provence region, as well as the surrounding Mediterranean area. Historically, Rosé wine practically disappeared in the nineteenth century and the first half of the 20th century. Red wine was reserved for peasants and workers, while Rosé became the fashionable wine of choice for the middle class in the 1960s. Today, and especially in the past 20 years, there is a new surge in popularity, and the number of Rosés on the market continues to grow, seemingly unabated. In fact, the demand for traditional dry Rosé is so widespread that across France, Rosé outsells white wine and outside of France, it is experiencing a rebirth. Closer to home, Rosé really is having a resurgence with sales continuing to rise as wine lovers around the country become more and more familiar with the prettiest wine around. Almost all of the world’s wine-producing regions make Rosés. The first, and arguably, the most important Rosé producer is France, where it is predominantly found in the southern region of Tavel, Provence and the

Loire Valley in Anjou. Other important regions are Piedmont in Italy, Rioja in Spain and Styria in Austria. For this wine, colour is essential – it’s a major aspect of its appeal. It is impossible to define the “correct” colour of Rosé wine, which can be a veritable rainbow of different shades of pink – from pale copper, pastel pink, cherry red, incandescent fuchsia, mauve blushes and magenta, through to apricot and even orange. The vast range of colours depends on the grape used, the richness of the grape’s phenolic compounds and the winemaking techniques used, including the length of time the grape skins have been in contact with the grape juice. And when it comes to the taste, you can expect sweet, savoury, dry, textural, smooth, light, creamy, heavy – you name it! Australia’s fresh and vibrant Rosés are generally produced from red grape varieties such as Shiraz and Grenache, with only minimal contact on skins to give the wines their signature ‘blush’. The great thing about Rosé is that it can be enjoyed all year round. But it is really in its prime in the warmer months. After all, is there anything more magical than a summer picnic or BBQ with friends, delicious food and a glass of gorgeous pink in your hand? As a fantastic food wine, it can be paired with various foods and flavours and handles spices and heat very well. Rosé is excellent alongside salads, antipasto platters, fish dishes or even your favourite curry. When pairing with cheese, Rosé is the perfect accompaniment to soft goat cheese. Rosé usually has a delicate flavour and a balance of sweetness and acidity that make it a refreshing palate-cleansing drink. Best served young and at a chilled temperature, Rosé wine is a tasty alternative to a red or white. It can be a refreshing accompaniment to a variety of meals – as it tops the charts for food-friendly versatility.
